imma bake you a cake.

Actually, I baked myself a cake.

A single-serving cake.

So…I lied. That title just had such a ring to it.

But here’s really simple recipe – using just four ingredients – that will leave your mind blown and your stomach happy. Promise.

peanut butter chocolate chip cookie cake {for one}.

ingredients:

  • 6 tablespoons yellow cake mix (I used Gluten Free Pantry)
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon chocolate chips (I used half dark and half white)
  • 2-3 tablespoons milk

directions: Preheat oven to 350 degrees. In a large-ish bowl, combine cake mix and chocolate chips. In another bowl, whisk together peanut butter and milk. Add wet ingredients to the dry ingredients and combine well. **The result will be more like a cookie dough than a cake batter.** Place dough/batter into a greased 6-inch diameter ramekin. Bake for 20 minutes.

Let cool for at least five minutes. Eat straight of the ramekin, or shimmy it out onto a plate.

Mostly cookie, part cake, insanely good. Make this.

    do you think this would work with brownie mix? I only ask because I just bought of TJs mix and it's sounding really appealing right now.

    since you used dark chocolate, obviously i am considering this a health food.

    also, the white chocolate would probably be great with rolled oats and dried cranberries…seeing a lot of single serving cookie cakes in my future. i’ll re-link back to your page if i try it!

    SO I was looking for something to mail my best guy friend for his birthday. I grabbed some ingredients for oatmeal chocolate chip cookies. I’ve totally changed my mind. LOVE this and can’t wait to make it for him.

    In a moment of desperation last night, we made this with chocolate cake mix instead (we ran out of yellow mix) and it was pretty good! Not as good as the yellow cake, but still worth the effort.

    Made this last night with almond and coconut flour. It was delish. I also used fudge frosting. It was yumm. Everything I made was with clean ingredients. Thanks for the awesome idea!
