Like most moms I know, mine always asks what I want for dinner when I pay a visit back home.
She’s trying to keep me here as long as possible, I just know it.
Since I’m home for a few days to train for my new position, momma G made sure to make something delicious and comforting for my first night back in Pennsylvania. On the menu:
herb-rubbed pork loin roast.

{adapted from Hatfield’s pork loin roast recipe}
ingredients:
- one 3-pound boneless pork loin roast
- 2 tablespoons black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried rosemary
- 2 teaspoons dried thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 cup sliced mushrooms
- 1 cup sliced onion
- 2 cans of whole potatoes, drained
directions: Preheat oven to 350 degrees. Combine all of the seasonings in a small bowl, and then apply the mixture to every surface of the pork loin. Place roast in a shallow pan with the mushrooms, onions, and potatoes surrounding it (don’t put them on top of the roast). Place in oven and bake for 60-75 minutes, or until the center of the roast reaches 150 degrees. Let sit for at least 15 minutes before slicing.

Serve with a vegetable and a grain, which in our case was sauteed broccoli rabe and brown rice. Per. fect. ion.

This is seriously some of the best pork I’ve ever had. It’s perfectly tender, flavorful, and – according to mom – really easy to make, too!
What’s your favorite “welcome home” meal?




My family usually does pizza as a welcome home meal – because it’s so hard to find one single meal that all of us will eat, the build-your-own variety works the best for us!
My older sister lives downtown (a mere 20 minutes from my house!), but she still gets a special meal whenever she comes! I live at home and usually make my own dinner, though my mom will sometimes make her homemade mac and cheese casserole for me…if I’m lucky!

My mom will sometimes make her tuna noodle casserole as a welcome home dinner– it’s our favorite meal, one which the only other person in my house who enjoys it is my dad! My two little sisters usually just have cereal.
It depends. If it’s a welcome home in general, pork and scalloped my dad’s mom’s recipe for potatoes.
If it’s a late night coming home, it’s a boiled hotdog with cheese on top.

Mmmm, that looks delicious! I have a week off for half term at the moment and have come home but unfortunately my Mum is away until Sunday – I can’t wait to get something home cooked!
