chicken & broccoli mock’n cheese.

A few months ago a shared a little concoction for mock mac’n cheese, which – if I’m being honest – was really just a way to use up yogurt that was about to go bad and the nutritional yeast I impulsively bought.

I bet you’re just dying to try this recipe now, aren’t you?

I’ve got to say, though, that the combination really did make for a delicious switch-up from regular mac’n cheese. So the other night I kicked it up a notch by adding chicken and broccoli, and the result made for a filling and easy dinner.

ingredients:

  • 3oz chicken, cooked
  • 1/2 cup broccoli, cooked
  • 1 serving pasta, cooked (I used quinoa pasta)
  • 1/4 cup plain Greek yogurt (I used 2%)
  • 1 tbsp nutritional yeast
  • salt and pepper to taste

directions: After cooking the pasta, place in back in the pot along with the chicken and broccoli and set aside. In a small bowl, combine the yogurt, nutritional yeast, salt and pepper. Add the “cheese” sauce to the pot and stir until well combined. That’s it!

Where do you draw the line with mock meals? (for example, I just can’t bring myself to use portobello mushroom caps as “pizza crust”…)

    blahhh. i bought nutritional yeast a little while back and i’ve used it like, 3 times. i’ve just added it to veggies, but to be honest, i don’t taste anything! hopefully i can find a good Mama Pea recipe to use it up in, otherwise I think it’s going to be one of those purchases that sit in the fridge until it’s time for a clean out…womp womp.

    I don’t really like meat substitutes. I tried fake pulled pork once and it was absolutely awful. I just bought some nutritional yeast to make Mama Pea’s Mmm sauce, but I have a lot left. I know what I’m doing with it now!

    Oh this looks really good! I now just need to work out the translation for the measurements from ‘cups’ and ‘oz’ to ‘grams’ and ‘ml’ and find out what nutritional yeast is.

    I guess I’m the odd man out cause I love using mushroom caps as pizza crust!
    I’ll ususally try any substitute I hear of. There have definately been ones that didn’t turn out.
    Mock Mac and Cheese with brocolli is going to be my lunch tomorrow- Thanks!

    I recently say a post using Naan Bread as a thin crust pizza, I’m trying it this weekend! I think i draw the line with using pretend meats, and things like Tofu dogs, or Chix’n or whatever they call it. I could never us watery mushrooms as a pizza crust, just can’t fade it. I hate those fake meats though I’m not sure what they are made up of, and it freaks me out that it was created in a lab by MAN and not running around eating grass before it hit me plate.

    I LOVE adding broccoli to my pasta dishes- it’s the best when the florettes absorb all the saucy goodness! I was thinking I need to make pasta soon, thanks for the inspiration, looks good 😀

      I’ve only seen it at Whole Foods :( pretty sure it’s not at TJ’s. Do you have any local natural health food stores? Otherwise online is prob your best option. Sorry! :(

    Ohh this looks yummy! I mean who doesn’t love Mac and Cheese?! I’m not so sure about the nutritional yeast thing though- I’ve never had it and have to admit that it scares me a little! But maybe it’s better than I think?? And a mushroom cap as pizza crust? That is crazy! I’m not a big fan of a lot of dessert swaps… I’m sure that the end result is great but putting a tsp of 15 different things in it just doesn’t sound cost or time efficient!

    This chicken broccoli pasta dish looks yummy!! I was wondering, how do you make such a delicious recipe with only 1 serving? It’s so hard cooking for myself because I only want to make 1 serving and don’t like leftovers!

      I make single serving meals 99% of the time because I don’t like the pressure of having to finish leftovers, haha! Making single servings like this is actually quite easy! You just use smaller portions of everything. I like having frozen veggies on hand because I can just microwave a serving or two at a time and put the rest back in the freezer. I also get pre-portioned chicken breasts (Perdue makes them - sort of expensive though) that I freeze and just grab one at a time.
