Growing up, one of my favorite meals was something called…
I considered Pita Pizza to be thee ultimate treat of a meal. I actually thought that everyone ate it…kind of like how I thought everyone else called noodles “noonies.” Ahem.
Funny thing is, my mom recently told me that the real reason she came up with the idea because we were running low on food in the house, and these ingredients just happened to be on hand. So creative, mom
Pita Pizza is really easy to make. In a bowl, combine:
- 1/4 cup ricotta OR cottage cheese
- 1-2 tbsp mozzarella cheese
- 3-4 tbsp tomato sauce
- cooked spinach/veggies (optional)
Fill a pita (two halves) with the mixture. Then, put it in the toaster oven for 5-10 minutes, or until the cheese is melted.
As you can probably tell, Pita Pizza can get quite messy, but that’s part of the fun
What was your favorite childhood meal?
Does your family have any unique/strange meal creations?

I'm the girl, Gracie Gordon. Here at GML you can follow my journey of dreaming, working, eating, loving, and blogging my way through life in NYC.

That sounds ah-mazing! Cheese+carbs is bound to be good no matter how you serve it! My favorite childhood meal was an African groundnut curry which was basically like eating peanut butter on rice. The base of the curry was only peanuts and it was oh so good- a bowl would probably tick off my month’s quota of healthy fats!
I love mothers sometimes haha. My family has a few little meals that I thought everyone used to eat but come to find out it was just an odd creation to satisfy my brother and I whining about food.
Pizza looks delicious and is tempting me to try it this week!
This is so cute-I’ve never heard of anything like it! Yum.
I actually make something I call pita pizza too but it is quite different than yours! I just use the pita as the crust and put sauce, toppings, and cheese on top and pop it in the oven. I will have to try your way though, this looks awesome!
I used to do that too!
That looks great! My mom used to put peanut butter on a tortilla with a few marshmallows and pop it in the microwave for a few seconds. The marshmallows would get huge and melty and then she would wrap it up. We didn’t have a name for it but I guess it would have been like a peanut butter and fluff burrito! It was definitely one of my favorite treats as a kid!
Its like a super easy calzone! Yum!
I was a grilled cheese kind of kid! Plain and classic.
Ditto on all of this! Grilled cheese or mac n cheese for me…clearly setting myself up for a life of cheese and carb lovin’
I’m an extra cheese kinda girl.
Now could you please get your tail back to Maryland so we can get into more bars (FO FREE) and chat (maybe eat some pizza) in a potted plant?
Love you!
Yummmmm! Looks great - I definitely need to try this.
This looks scrumptious! Mama GML suuuuure knows how to make a bangin recipe! I’m trying this asap
Wow that sounds so good! Anything with ricotta and I’m in! My family always made comfort food- a lot of casseroles and what not. My favorite was probably chicken casserole. It’s a mix of chicken breast, gravy, and stuffing! My gramma makes a vegetarian version for me now with mushrooms:)
My favorite childhood snack was pretzels dipped in applesauce. I still eat the duo sometimes and it brings me back
GOOD JOB MOM. that looks like an amazing creation! Kind of like a stomboli/calzone. YUM
“noonies” = cute!
I tend to think of spaghetti and crusty garlic bread as a meal growing up.
Weirdest thing my Mom would make is a tator tot casserole with nacho cheese, turkey burger, tator tots, and um, I think rice. Carb-licious.
Noonies! Ha. love it. This looks great, Gracie! I love pizza in any form so this is right up my alley.
My mom used to make Orange Chicken and I remember she would lightly flour it and then cook it in OJ. It was so juicy and delicious and I remember begging her to make it many times!
This looks really good, I’ll have to try it. Anything in a pita looks good to me though…
“Noonies”…aww that’s so cute!! I know what you mean about being convinced of certain things as a kid and then realizing as a shock that it was “just your family” that did things that way later on haha. I literally believed oatmeal was “opiemeal” for the majority of my youth…very confusing.
So simple.. yet looks sooo delicious!
I’ve never heard of Pita Pizza! It looks yummy
I make something I call pita pizzas too! I just pretty much use the pita as the curt and top it with yummy toppings and cheese and tomato sauce and pop it in the oven. My mom used make that kind of pita pizza for us as kids. Yours looks really good too!
I LOVED pigs in a blanket, with a slice of american cheese when I was little! I also loved plain white rice topped with american cheese.
Your meals sound a little more gourmet:)
We used to eat those mini pizza bagels - I can’t remember what they’re called for the life of me!! They were so so good though. And we ate tons of texas toast
Bagel Bites!
My family makes huge batches of soups, chili & stuffed peppers. We’re big into freezing stuff. And wow! That reminds me of a pizza pop with the insides oozing out. Looks so good!
yummy! I’m definitely going to try that
My mom used to make me eat vegetables by mixing Stouffer’s Spinach souffle with elbow noodles… I still crave it ALL the time!
Ohhh this looks delish! And what an easy dinner or lunch it would be! But I don’t have a toaster oven
Do you think it would work in the microwave?
I was all about the Kraft Mac and Cheese as a kid… it was kind of my favorite thing ever!
OMG that looks so good. SO good.
). We ate a lot of tortillas with cheddar folded and microwaved too. Cheese was clearly a big thing in my house.
I ate a lot of Kraft Dinner when I was little. And grilled cheese (started out loving it with real cheese, then transitioned into cheese slices ONLY. Now I like it real again
This sounds great! I LOVE pizza! (really, its the cheese that gets me. I love anything that’s a good vehicle for cheese!) Growing up, I loved breakfast for dinner! I would get so pumped when my mom would say we were having omelets for dinner!
Sounds yummy! I alway loved grilled cheese sammys (still do)
Yum these look good! I love that you stuff the pitas instead of making a pizza on top of them!
My favourite meal as a kid were cream cheese and jam sandwiches. I still love that combo on my bagels!
I’m making this tomorrow!
Totally reminds me of my Mom’s English Muffin, American Cheese slice, and Ragu.
Tastes nothing like pizza to me…it tastes like, well, english muffin, Ragu and Craft Cheese.
GRACIE!!! I made it this for lunch today! And I totally thought this to myself, “I am probably the only one in the world who eats this, but it’s soooo good.” I can’t believe someone esle does! Makes me not feel alone
They are definitely delicious! YAY PITA PIZZAS!!!
That sounds awesome! I don’t know if it brings me back to childhood because we still eat it, but my family eats pasta with marinara or meat sauce (typical italians hah) with a hard boiled egg (or two) on top… Oh and a sprinkle of parmesan sprinkled of course
It is honestly so good, love when the egg mixes in with the marinara!
That looks super good! Pita pizza (not exactly like your recipe, but another variation) is a go-to of mine too. Yum!
That sounds INCREDIBLE!
My favorite childhood meal was cheddar cheese and mayo sandwiches. EW, I would never eat that now, I was a strange kid.
That pizza pita looks good and easy to make for a quick lunch!
Homemade hot pockets- YUM!
Growing up we ate a little differently than most everyone I know. My parents were big fish eaters. This, keep in mind, was in the 80′s where fish wasn’t exactly as mainstream as it is now. We literally ate fish almost 4 nights a week. I was probably the only 3 year old dining on stir-fry shark. I didn’t realize that this wasn’t “normal” until I was much older.
I could probably eat that every single day. Tomato sauce, cheese, and bread. My kind of thing! You could also add pepper, onions, or mushrooms!
This looks awesome! My mom used to make macaroni noodles with stewed tomatoes and cheddar cheese on top…I think that was her version of a meal that was thought up last minute, too!
Looks like a calzone to me and pretty awesome.
I cooked for myself when I was 7 and I used to ‘make pizza’ by putting cheese and tomato sauce on french bread. It was pretty darn good!
When I was a kid, we would dip really fresh white bread (usually wonder bread) in cream or half and half mixed with sugar. Seriously amazing.
I still do it once in a blue moon with almond milk. Doesn’t have the same creaminess of the cream but the taste is still there. I have no idea where this originated from, but my mom (French Canadian) said she used to do it as a kid. It’s so weird but soooo good.
I make pita pizzas all the time using various ingredients (Italian, Mexican, etc.)… Sometimes I stuff them which makes them more like a calzone or put the toppings on top like a traditional pizza, fabulous!
I can’t believe I’ve never heard of pita pizzas?!? They look awesome! I’ve only had English muffin pizzas
Hmmm… I’ve been wanting to try a new way to get my beau to like ricotta, this might do the trick!
Noodles as noonies? I had to think for a solid minute if that was a Parks and Recreation reference. Not sure if you saw the clip (http://youtu.be/IkvPVGcpthc) but it TOTALLY reminded me of that. In a good way, of course!
It was wonderful meeting and hanging out with you at Fitbloggin’! Thanks for letting Luke and I tag along!
this looks awesome
i have made pita pizza before! also done the same thing and cooked it in a skillet like a panini!!! either way, it looks BANGIN’
I made this last night and it was delicious!
Just thought I’d officially note my approval.
Ohh yay, so glad you liked it!!
xo
that’s funny. Some of my favorite childhood meals are just so simple, it’s ridiculous. Sometimes simplicity is best
[...] that I really wanted to try tonight, since my cottage cheese un-loving lover wasn’t around. Pita Pizza’s, featuring cottage cheese! Pita [...]
We make pita pizzas all the time, but not in the pocket, more ontop like a pizza would be. WE then just put some olive oil on the bottom and throw them on a grill or in the oven on top of some aluminum foil. My favorite combo is left over veggies (like asparagus or corn) on top of pesto sauce and goat cheese with some hot peppers for spice. It really makes it easy to make a fun and delish dish!
