put the cake in pancake.

Last night I made one of my favorite “desserts” – one that I haven’t had in far too many months.

A single, fluffy, jumbo banana pancake.

I used to make/eat single-serving banana pancakes like it was my job, but I never posted the recipe because I thought it was just too simple (although, I did post the recipe for a Baked Banana Pancake Bowl, which is also pretty bomb). But since last night’s ‘cake was particularly epic…and gluten-free…I figured it was about time to share the easy treat with you.

ingredients:

  • 2 tablespoons Gluten-Free Pantry all-purpose flour*
  • 1/4 tsp baking powder
  • 1 small ripe banana
  • 2 tablespoons milk (I used whole)
  • optional: cinnamon, chocolate chips, chopped nuts, etc.

*I can’t say for sure if the ratios would be the same for another type of flour, but my guess is to use somewhere between 2-4 tablespoons.

directions: Grease a stovetop pan with cooking spray and turn heat to medium-low. In a small bowl, combine the flour and baking powder and then mash together with the banana. Slowly add milk while whisking the batter (you want it to stay somewhat thick – not too runny). Place all of the batter on the center of the pan, and cook for 3-5 minutes on each side or until the pancake is…well, done.

I don’t know what it was about this particular pancake (possibly the gluten-free flour?), but it had the consistency of an ooey-gooey piece of banana cake. Or something. Add some almond butter as “frosting,” and you are good to go, my friend.

    Love this idea! I’ve actually been on the lookout for fast night time snack cakes/muffins/cookies like this one. I can’t wait to try it out!

    My favourite simple recipe is a stir fry sauce made from sunflower seed butter, soy sauce, and lime juice. It’s my absolute favourite!

    Right now I’ve been loving what I call “lazy girl curry” - it’s canned garbanzo beans + brown rice + a spoonful of Earth Balance butter + a sprinkling of curry powder. Takes all of 3 seconds to make and it’s so yummy! Authentic curry, no, but delicious, wholesome and SIMPLE!

    I love chocolate chip banana muffins…which I suppose is similar to your banana pancake except it’s a muffin and includes chocolate chips. They’re delicious! This looks great too-will have to give it a try!

    I LOVE banana pancakes — it’s good to sub the banana for “fried” (aka cookied) applies and pecans too!

    PS you were SO RIGHT about the pumpkin spiced coffee!

    Mmm, love [banana and pumpkin] pancakes!

    An oh-so-simple “recipe” that I eat on a daily basis: Greek yogurt + stevia + cinnamon + peanut flour or pumpkin… Super speedy, knockoff “pie”! Or an egg scramble: whatever veggies I have available + 2 eggs/ whites + topped with salsa and hot sauce :)

    I should make one of those sometime. We have so many bananas in this apartment that we don’t know what to do with all of them.

    My favorite too-easy-to-be-true recipe is for this bbq chicken pasta thing I made once: Cook pasta. Add cooked chicken. Add bbq sauce. Stir all and love. Big fan.

    Oh man was this good. So moist and flavorful. I love banana cake and this has to be the best I’ve had. This cake didn’t last long at our house…lol. Thank you for this delicious cake recipe….Stephanie
