Well I’m just happy as a clam.

No really – that’s my “happy as a clam” face. Do you like it??

I must say that this weekend with my family has been exactly what the doctor ordered. So far I’ve enjoyed:

  • two relaxing days on the beach.
  • chill sessions on the dock.

  • an early-morning breakfast at our favorite diner.
  • ample amounts of what I like to call orangey soda.

  • and home-cooked meals, which I will forever have a whole new appreciation of.

You’re not gonna find that cooking up on my studio-apartment kitchenette.

I’m excited to spend a night on the town with my favorite cousin and some galfriends. But for now, I’ll leave you with the recipe for this rockin’ barbecue chicken my dad made for dinner.

daddio’s barbecue chicken.

ingredients:

- 4 large split chicken breasts
- 1 bottle of (original-flavored) BBQ sauce
- kosher salt
- black pepper
- garlic powder

directions:

1. Preheat oven to 300 degrees.
2. Cut chicken breasts in half and arrange in a foil roasting pan.
3. Rub both sides of chicken with seasonings (be generous with the kosher salt and “to taste” with the pepper and garlic powder).
4. Cover chicken with BBQ sauce and flip around to coat completely.
5. Cover pan with aluminum foil and bake for 1 hour, then turn heat up to 350 for 30 minutes.
6. Finish by browning the chicken on the grill – high heat, 10 minutes each side.
7. Remove chicken from grill, cover with foil and let rest for 15 minutes. Yields 6-8 servings.

Optional: Place the drippings from the roasting pan into a sauce pan and simmer for 10 minutes for additional BBQ saucey deliciousness.

Now that is something to whip up for this 4th of July weekend, my friends.
