Remember when I made a cake batter cupcake?

Well, when I saw cookie mix on sale at the grocery store the other day……..

I think you know where I’m going with this.

This treat isn’t for everyone. In fact, it might even gross some people out. But me? I’ll take an ooey-gooey-two-ingredient baked good any day of the week. And I’ve never met a boxed cake/cookie mix that I didn’t like.

Clearly.

To make the cupcake, combine 1/3 cup boxed cookie mix with 1-2 tablespoons canned pumpkin in a bowl. Place batter in a greased and/or lined cupcake pan, and bake for 8-10 minutes at 350 degrees. Let cool for a few minutes before eating.

You can taste the pumpkin in this, but it’s not overbearing. Think: chocolate chip cookie meets pumpkin muffin cake.

While I can’t say that this is as good as it’s cake batter cousin, it has definitely made for a great nightly dessert. I may or may not happen to know that it also works if you double the amount…

    Drooooool! I love making single-serving baked goodies 😀 I am really really needy — I want my cupcake/cookie/cookie dough cupcake 😉 to taste like it JUST came out of the oven every single time.
