banana flax muffins.

I find myself scrambling to find something to grab for breakfast just about every morning. No matter how early I seem to wake up, I’m always under the assumption that I’m going to run late and miss the train.

In other words, yes - I’m that crazy broad running for the train will spilled coffee in one hand and her heels in the other.

But, since Starbucks probably isn’t going to reduce the price of their Apple Bran Muffins any time soon, I decided it was time to take matters into my own hands.

ingredients:

  • 3/4 cup ground flaxseed
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, packed
  • 1/4 cup whole milk
  • 1 egg, beaten
  • 1/2 teaspoon vanilla extract
  • 1 large banana, mashed

directions: Preheat oven to 350 degrees and line or grease a muffin pan. In a large bowl, combine the flax, flour, baking soda, baking powder, and salt. In another bowl, whisk together the sugar, egg, and milk. Add wet ingredients to dry ingredients and combine well. Then add the mashed banana just until combined.

Fill muffin cups with batter and bake for 18-20 minutes. Yields 6-7 muffins.

These definitely aren’t your frostingless-cupcake sort of muffin; there’s a pretty strong flax flavor going on (i.e. they taste “healthy”). I’m personally into that sort of thing, so I love these!

Like with scones, I can’t deny my love for Starbucks baked goods entirely. These are a darn good replacement, though, and I’m pretty sure my wallet will be thanking me at the end of the week.

    mmm, this moffins look good.

    I always have plenty of time to eat my oatmeal while reading blogs but I’m always rushing around to get ready to leave.

    I decided to keep waking up at the same time I woke up when I commuted so I can have that extra time to read blogs, make coffee, etc…but it still feels crazy and rushed on some days! Chobani is a great grab-and-go (and dang now I’m craving it!)

    I’m not a crazy person in the AM, but only because I AM a crazy person- waking up at 5:30 when I don’t have class till 9:30. I like time to go to the gym AND have a leisurely morning, although somehow I always end up rushing around packing my bag and getting dressed in the last 15 minutes!

    I’m usually a cereal kind of girl cause it’s quick and tasty, but if I’m in a really big rush I’ll grab a granola bar to hold me over!

    Mmm I love muffins for snacks rather than breakfast! I’m an oatmeal girl all the way, but to-go I’d totally eat one of these.

    YUM! I’m not really a muffin-for-breakfast person gal because they don’t keep me full for very long (I’m an eating machine?) I always set aside enough time to eat a big bowl of oats w/tons of toppings or a bowl of cereal with banana slices :)

    oh I am definitely a mad woman in the morning, no matter what time I get up, I am always running out the door forgetting something!

    yum, i love muffins, and these would be perfect to run out the door with me!

    I actually wake up a lot earlier in the mornings than I have to just so that I don’t have to rush to get to class. I like to have enough time to sit down to breakfast and mentally prepare myself for classes haha. :P

    These muffins look so perfect! I like it when they taste healthy too!

    Anything with flax in the title is sure to grab my attention- I believe flax contains magical powers. These look delicious! I would definitely top these with peanut butter! : )

    i love eating breakfast! it’s what gets me out of bed most mornings. well, breakfast coupled with coffee so i can get my eyes to peel open. :) i am totally with you on the prices of Sbux baked goods. they are tasty but i am way to much of a penny-pinch these days to buy them. i got their apple-bran muffin last week and it was more expensive than my drink!

    my favorite grab and go breakfast is to throw organic/non-fat plain yogurt, chopped fruit, granola, walnuts, touch of light agave nectar, ground flax seed and 1 scoop of protein powder together in a tupperware container. i can take it with me and pack a freezer cube with it to keep it cold. it’s a power breakfast but i love it. i know it will get me through the morning…along with my coffee, that is. Love you gracie! btw i love the taste of ground flax seed too.

    I can’t eat muffins for breakfast. It seems that no matter how healthy they are I always feel shakey and crummy after eating them. If I’m in a rush I’ll usually grab a granola bar or put some oatmeal in a mug.

    Muffins are the perfect grab and go. I made some using your recipe but using hemp milk and blueberries (in addition to banana) and they turned out great! Keep posting the great recipes :)

      Hey Carrie!
      Considering the recipe calls for 3/4 cup ground flax, I wouldn’t omit it completely. You could try replacing it with extra flour…? I’m not sure how that would work, though! If you try it let me know how it turns out!
