banana flax muffins.

I find myself scrambling to find something to grab for breakfast just about every morning. No matter how early I seem to wake up, I’m always under the assumption that I’m going to run late and miss the train.

In other words, yes – I’m that crazy broad running for the train will spilled coffee in one hand and her heels in the other.

But, since Starbucks probably isn’t going to reduce the price of their Apple Bran Muffins any time soon, I decided it was time to take matters into my own hands.

ingredients:

  • 3/4 cup ground flaxseed
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, packed
  • 1/4 cup whole milk
  • 1 egg, beaten
  • 1/2 teaspoon vanilla extract
  • 1 large banana, mashed

directions: Preheat oven to 350 degrees and line or grease a muffin pan. In a large bowl, combine the flax, flour, baking soda, baking powder, and salt. In another bowl, whisk together the sugar, egg, and milk. Add wet ingredients to dry ingredients and combine well. Then add the mashed banana just until combined.

Fill muffin cups with batter and bake for 18-20 minutes. Yields 6-7 muffins.

These definitely aren’t your frostingless-cupcake sort of muffin; there’s a pretty strong flax flavor going on (i.e. they taste “healthy”). I’m personally into that sort of thing, so I love these!

Like with scones, I can’t deny my love for Starbucks baked goods entirely. These are a darn good replacement, though, and I’m pretty sure my wallet will be thanking me at the end of the week.
