super bowls.

While I loved the company, food, and reading Twitter analyses of every commercial on Super Bowl Sunday, I’ve got to say that I’m partial to bowls of a different sort.

In an attempt to use up what I’ve already got stocked in the kitchen (what else is knew?), dinner last night looked like this.

That would be a bowl layered with spinach, butter, whole wheat gnocchi, kidney beans, and salted sunflower seeds. Weird combination – maybe – but it worked.

Breakfast this morning was a bowl I haven’t had since summertime…or since the last time I made it, for that matter. Sweet Potato Pie Oatmeal.

(Topped with coconut butter “fluff.”)

Super Bowl is cool, burrito bowls are even better, but these bowls are definitely in the ranking.

    haha i’m partial to those kinda bowls rather than the football one, too!

    hmm last thing i ate from a bowl was my failed breakfast pancake - it tasted pretty good as an oatbran random scramble, though!!

    i wish we could get WW gnocchi here, sounds amaze!

      It’s actually just melted coconut butter! I said “fluff” because the last time I made it I used marshmallow fluff (since sweet potatoes are often topped with marshmallows!) :)

    Mmm, I definitely love eating things out of bowls. The last thing I ate out of one was oatmeal with peaches and peanut butter, aka, yesterdays breakfast. :)

    I am a HUGE fan of bowls. They’re my favorite go-to dinner. Tonight, as per usual, I started with a cooked sweet potato, mashed it up, and added some chicken breast, a spoonful of carrot salad, spoonful of roasted beat salad, and a sprinkling of feta and micro greens. It was pure bliss.
