I usually don’t win stuff.
Like, ever.
That is…up until a few months ago. Upon receiving my second month’s shipment of VitaTops yesterday, I decided it was probably a good idea to repost the recipe that helped me win a six-month supply of them.

(But really, it was thanks to your votes that I won Roni’s VitaTop recipe contest. So, thank you! :))
For those of you who aren’t familiar with VitaTops, I highly suggest that you get familiar with them. They’re essentially healthy muffin tops that come in dozens of different flavors, are full of fiber and vitamins, and only 100 calories each. They’ve been a staple food of mine for years. I just love ‘em!
Anyway, on to the recipe.
VitaTop French Toast.

ingredients:
- 1 VitaTop (any flavor will work – this time I used Apple Crumb)
- 1 egg (or 1-2 egg whites)
- 1-2 tbsp almond milk
- 1/4 tsp vanilla extract
- generous sprinkle of cinnamon
directions: Combine egg, milk, vanilla, and cinnamon in a bowl. Microwave the frozen VitaTop for 25 seconds, then soak it for about a minute in the egg mixture (there will be some mixture left over…probably enough to soak another VitaTop).
Cook the VitaTop for 2-3 minutes per side on medium heat on a greased stovetop pan or griddle.
Use toppings of your choice.

The best thing I’ve ever won were tickets to an NSYNC show when I was younger, but unfortunately the show was cancelled due to bad weather so I never go to go.

Yay! Congrats girl!! I started making your vita muffin french toast with the corn muffins a few months back-and it was so good, I make it at least once a week!

i LOVE the chocolate vitatops..i put them in the toaster..put a little cup of chocolate pudding on top then top the whole thing with whipped cream and chocolate chips! delicious!
Yum!!! Have you tried the new Vitatops pumpkin version? I’m dying to find out what they taste like! That french “toast” looks delish!

Anywho, I’ve got a question for ya. Can you get VitaTops at store’s like Kroeger, or do you have to go to a specialty store like Trader Joe’s?

Hi Sarah! I’m not familiar with Kroeger, but I’ve seen VitaTops at Acme, Stop n Shop, and Safeway. You can also order them online. Hope that helps!

USA Nationals for cheerleading! Well maybe it wasn’t the best thing I’ve ever won, but it certainly was the most rewarding!

I’m in the minority who has never tried these. Is there a chocolate one? Who am I kidding, there has to be a chocolate one. I love muffins like nobody’s business so as long as these have that great taste, a box probably wouldn’t stand a chance.

The best thing I’ve ever won was our cross country sectional championship this past season. We were expected to come in third place, but we won! I cried, my coach was jumping up and down, and we all PR’d that day. I’ll never forget how awesome it felt. Plus I got a few newspaper clippings out of it
The best thing I ever won was a gift set from Chobani…yeah foodie at heart. My family just laughed when they saw the (literally) HUGE chobani box on our front porch. I smiled. That stuff is GOOD.
And now, I will be ordering Vitatops. And making your french toast STAT!
