a (literally) winning recipe.

I usually don’t win stuff.

Like, ever.

That is…up until a few months ago. Upon receiving my second month’s shipment of VitaTops yesterday, I decided it was probably a good idea to repost the recipe that helped me win a six-month supply of them.

(But really, it was thanks to your votes that I won Roni’s VitaTop recipe contest. So, thank you! :) )

For those of you who aren’t familiar with VitaTops, I highly suggest that you get familiar with them. They’re essentially healthy muffin tops that come in dozens of different flavors, are full of fiber and vitamins, and only 100 calories each. They’ve been a staple food of mine for years. I just love ‘em!

Anyway, on to the recipe.

VitaTop French Toast.

ingredients:

  • 1 VitaTop (any flavor will work – this time I used Apple Crumb)
  • 1 egg (or 1-2 egg whites)
  • 1-2 tbsp almond milk
  • 1/4 tsp vanilla extract
  • generous sprinkle of cinnamon

directions: Combine egg, milk, vanilla, and cinnamon in a bowl. Microwave the frozen VitaTop for 25 seconds, then soak it for about a minute in the egg mixture (there will be some mixture left over…probably enough to soak another VitaTop).

Cook the VitaTop for 2-3 minutes per side on medium heat on a greased stovetop pan or griddle.

Use toppings of your choice.
