FRIENDS! Hello 🙂 I hope you all had a fab weekend.

I arrived home yesterday evening after another great day in Long Island, which included church, brunch, and some more quality time with my boos. Have I mentioned how much I love these ladies???

Yes, those are Ring Pops. We’re mature like that.

turkey chipotle panini.

By the time I got home last night I was ready to bum it out on the couch with an easy yet comforting meal. Luckily, Momma G had the kitchen stocked with all the necessary components to make a ballin’ sandwich. And, I don’t know about you, but I think the only thing better than a good sandwich is a good grilled sandwich.

It all started with some fresh ciabatta.

I sliced off a nice chunk of the bread and added turkey breast, spinach, provolone cheese, and my new favorite condiment: Chipotle Mayo.

LOVE this. It definitely took my panini from okay to oh heyyy!

This sandwich got me thinking of all sorts of good panini additions: pesto, sundried tomatoes, artichokes, mozzarella cheese…

Let’s just say I foresee some more paninis in the near future 🙂

    Ciabatta bread = Heaven

    That looks so so so good! My favorite condiment is definitely MAYONNAISE. I love the stuff…on everything HA! Avocado is a close second (though I guess it’s not really a condiment, is it? HA!)

    I loooove paninis but I’ve never made one myself!! Pesto and sundried tomato spread are my fave 🙂 I’ve never had mayonnaise!! Can you believe it?! I feel like that needs to be on my list of things to try asap.

    chibatta bread is so good. I have never made my own sandwich with it though! I bet it would be really good with laughing cow cheese. LOVE that stuff! =)

    I love panini’s! Yours looks delicious!
    I seriously create at least 1 new one each weeek and I make them at least 3 times a week. They are easy, comforting, and so versatile!
