mini cheesecake pudding pies.

For dessert tonight I made Mini Cheesecake Pudding Pies. It’s a super simple recipe, which includes these two items:

Hey, I never claimed to eat only all-natural products.

I whisked the Jell-O with 1 3/4 cups of skim milk for 2 minutes, and then I poured the pudding into the mini pie crusts. I placed them all on a baking sheet to refrigerate for about an hour.

Top with whipped cream for a decadent and fun treat.

    I love mini desserts - those are SO cute 😀 I used to love Spaghetti-Oh’s and the canned mac n’ cheese - I believe Hormel used to make it, so unhealthy but so good 😉

    I crave mac and cheese too. It was my FAVORITE meal as a kid. Instead of using the typical noodles and Velveeta of my childhood (I never ate the boxed stuff), I use whole wheat pasta, mild cheddar cheese, and throw in a bunch of steamed veggies (usually some combo of corn/peas/green beans) for good measure.

    Simple AND delicious, indeed! It’s always refreshing to find a food blogger that doesn’t overwhelm me. I love being able to say, “Hey, I want to try that!” and ACTUALLY do it. Those mini cheesecakes are calling my name!

    We get the Annie’s Mac for M when its on sale. I tried some the other day and it really was liking taking a bite out of childhood.

    Mac n’ cheese always brings me back to my childhood. Nothing beats the classic Kraft version, but I also like to buy Annie’s mac n’ cheese and mix it up with some veggies and fake chicken. An “adult” version.

    I loved Mac & Cheese and still eat the Annie’s version today. Like most of the comments above, I try to dress it up a bit with corn & broccoli & make sure I have large side salad along with it. So good!!!

    Shut up! I am going to totally try that at my next party!! I wonder if you could do the same with a cupcake pan and crumbled graham crackers. That’s awesome!

    My favorite cookies were the butter ones in the shape of a flower with the holes in them, you’d dunk them in Kool Aid.

    There is just sum’thin about boxed mac n cheese, yummmm. Oh and Campbells tomato soup. FYI: I value how honest you are with your eats. You are one of the people who is secretly assisting me in my journey for balance!

    I’ve used those mini pie shells before - so fun! “Egg in a nest” takes me back to my childhood…a piece of bread cooked stove top with a hole cutout for the egg to cook. AND Mickey Mouse shaped pancakes that my grandmother would always make us. :) I also like to hollow out a scoop of mashed potatoes and put green peas inside.

    Those look so yummy and pretty! Pancakes bring me back to my childhood! I have had pancakes pretty much every sunday since I was little and I still do! The recipe really hasn’t changed at all except now I add some protein powder! I have had lots of pancakes but I can honestly say none of them taste as good as my mom’s!

    I have never seen those ready graham crust bowls. I must find them! I just have to tell ya, I’m babysitting my friend’s 3 year old and 1 year old, and when I pulled up your page, the 3 year old saw your picture and saw the blonde hair and asked, is that you Jen Jen? (That’s her name for me) I said no it’s another girl with blonde hair. :)

    I love how cute and easy those mini desserts are! I might have to whip them out at my next party. 😀

    I loved grilled cheese as a kid! Nowadays I’ll use brie instead of cheddar and add turkey and apple slices. But sometimes I just want the good old fashioned version too!
