Apple Cinnamon French Toast.

I am going through a serious French toast phase at the moment, and I don’t think I ever want it to end…

Clearly I had autumn on my mind when I thought of this breakfast. I made the most delicious batch of Apple Cinnamon French Toast.

I began by making the apple topping, which includes:

  • 1 small or 1/2 of a medium apple, sliced into small cubes
  • generous sprinkle of cinnamon (about 1/2 tablespoon)
  • sprinkle of sweetener of choice (I used stevia)
  • 1/2 tablespoon coconut oil

Add all of the above to a stovetop pan and put on medium heat. Combine all of the ingredients so that the apples are coated. Cook for 6-7 minutes, or until the apples are softened. When the apples are done, set them aside and spray the pan with nonstick spray. Then soak 2 slices of bread (I used whole grain) in the egg mixture:

  • 1 egg
  • 1/4 cup milk (I used skim)
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon cinnamon

Place the soaked bread on the pan/griddle and cook on medium/medium high heat for about 3 minutes per side (or until browned). And as if the breakfast wasn’t already decadent enough, I added the following toppings:

  • butter
  • cottage cheese (Greek yogurt would be great also)
  • chopped nuts (I used cinnamon-brown-sugar almonds)
  • more cinnamon

This was pretty much the perfect way to refuel after my morning workout. I did about 60 minutes of circuit training, which included Pilates, Yoga, and bouts of cardio (jumping jacks, running in place, etc.). It felt great to move after pretty much sitting on my butt for 2 days straight!

Oh, and FYI - there isn’t going to be a Trendy Tuesday post today. I’ve been pretty caught up with work and other things, so I hope you guys don’t mind!

    Mmmm messy breakfasts are the best. I love eating my apples that way too…I usually put them in my yogurt..its almost like Apple Pie but without the crust :)

    I’m in a loaded yogurt phase. it’s just so easy! My fave combo is Vanilla yogurt, banana, cinnamon, and multigrain cheerios! Yum!

    I’m not sure I’m in a breakfast phase at the moment (I like to switch things up!) but my fav fruit toppings are bananas and strawberries!

    I’ve been going through a bit of overnight oats loving lately but I think I need to bring some french toast back into my life! As for fruit toppings, berries and bananas always win!

    This looks freaking amazing. I’ve never made French toast because raw eggs seriously skeeve me out, but this looks like it could be served at a restaurant! Now, as always, I’m in the middle of a cereal breakfast phase. Favorite food in the world!

    Oiiiii, heaven! I’d like to be able to walk through my computer screen and enjoy that french toast. I haven’t had french toast in ages! Way, way too long.

    I am currently going through a cereal kick, pretty lame, but so good!

    That french toast looks like heaven!! I’m in a pancake phase, as in I take whole wheat batter and add dark chocolate chips and cocoa powder and top them with almond butter and shredded coconut. So amazing!

    OMG that looks amazing. I have been and always will be obsessed with cereal. Currently I mix Kashi Go Lean and Heart to Heart with some fresh strawberries and almond milk. Never gets old!

    This looks absolutely delicious! I am a huge believer in taking advantage of seasonal foods, but sometimes I want a pumpkin in the spring and asparagus in the fall. It may not taste as good as something perfectly in season, but it sure satisfies my cravings!
