Remember how my first attempt at making a Solo Cookie needing some tweaking? Well, I did it! Not without one more failure, though…
Solo Cookie attempt #2:


Delicious, but still too cake-like. Grrr. Attempt #3 was going to take place tonight, but the anticipation was killing me…
Ladies and gentlemen, we have a winner!

Solo Cookie
dry ingredients:
- 2 tablespoons whole wheat flour
- 1 tablespoon ground flax
- 1/8 tsp baking soda
wet ingredients:
- 1/2 tablespoon real butter (melted)
- 1 tablespoon apple sauce
- 1 tablespoon brown sugar
- 1/8 teaspoon vanilla extract
mix-ins: whatever you want!! But I used:
- 3 macadamia nuts, crushed
- 1/2 tablespoon white chocolate chips
directions: Preheat oven to 350 degrees. Line baking sheet with parchment paper (or just 1/4 of the sheet since you’re only making one cookie). Combine dry ingredients. Whisk together wet ingredients in a separate bowl. Pour wet ingredients into dry ingredients and combine. Add mix-ins. Form cookie on sheet, and bake for 10 minutes (or until a toothpick comes out dry).


Now THAT’S a cookie. It turned out soft and chewy – everything a cookie should be. So the next time you’re in the mood for a cookie but don’t want to be tempted by the entire batch, you know what to do!
Lunch today was not nearly as exciting, but still quite delicious.

I stir-fried about half of a chicken breast with a frozen pepper & onion mix. Then I sprinkled on some chia seeds and mixed it all together with macadamia butter. Yes – macadamia butter. Don’t knock it ‘til you try it!

I love it! I’m a cookiemonster so having the option of only baking a solo cookie (or a couple solo cookies) is such a great idea! I know myself and I know I’ll keep going back for more when the whole batch is sitting around, so this is great!
