I don’t know why, but lately I’ve been on a s’mores kick. Well, of course I know why. S’mores are…s’mores.

The fact that the other day was “National S’mores Day” (according to Instagram, at least) made me love them even more. So I decided to get a little fancy for breakfast yesterday and make a single-serving batch of S’mores Pancakes. But then I added banana because…well, I add it to just about everything. The result was…

Single Serving Banana S'mores Pancakes

ingredients:
* 3.5 tbsp gluten free pancake mix
* 1 banana
* 1 tbsp cocoa powder
* 1/4 tsp cinnamon
* 1/4 cup milk of choice (I used almond)
* 2/3 cup mini marshmallows
* 2 tbsp crushed graham crackers
* 1 tbsp chocolate chips

directions:
* Spray a pan with nonstick spray and heat to medium.
* In a bowl combine pancake mix, cinnamon, cocoa powder, and 1/2 of the banana (mashed). Then add the milk until you have a batter consistency.
* Form 2 pancakes in the pan, and press 1/2 of the marshmallows into the batter. Let cook for about 2 minutes per side.
* When the pancakes are done, layer the rest of the marshmallows in between them. Top with graham crackers, remaining slide banana, chocolate chips, and mayyyybe some more marshmallows.

Then…things get messy. In the best possible way.

    Hold on, Gluten free pancake mix? Coupled with Graham Crackers, like UH! Bananas for a Celiac intolerant would be dodgy, if that is your reasoning for using this pancake mix, as bananas whilst not having gluten, do contain Lectin. Lectin is also an issue. Plus this god awful concoction looks like a road kill. Too much sugar too little thought.

      I used the gluten free pancake mix because it’s what I had on hand + I like the consistency. I never claimed this was a gluten free recipe.

      The good news is you don’t have to make this if looks too unhealthy/like roadkill. Yay for you!

    As if I need a reason to love your blog even more! Haha s’mores! YUM I never know about any national days (cause New Zealand, ugh) BUT I did get amongst the International Cat Day! Haha. Priorities The last thing I made was two ingredient banana pancakes (yum) or a chicken-apricot-feta roll for brunch. Both were so good.

    I’ll always opt for savory over sweet, so the last decadent meal I made for breakfast was Eggs Benedict. I’m always so proud when I properly poach eggs! Your s’mores creation looks delicious, though!
