Now that it’s October, I think it’s pretty safe to say it’s officially comfort food season. And what’s more comforting than a massive bowl of soup?

Okay…maybe mac & cheese. Or grilled cheese. Or anything with cheese.

But soup is definitely up there on the list. And since I’m trying to eat on the healthier side this month, this Kale & Quinoa Minestrone Soup is veggies meet comfort food perfection.

Kale & Quinoa Minestrone Soup {vegan + gluten free}

To make the soup I followed this recipe to a T. It took just about an hour from start to finish.

I actually made this same soup once before and my whole family loved it. It’s a recipe I definitely wait until I’m at my parents’ house for because – let’s be real – a homemade soup with lots of prep isn’t exactly conducive to an NYC apartment kitchen.

If you’re looking for a hearty and delicious (and even healthy) soup for fall – this is definitely one worth trying! And for the sake of comfort food, don’t hesitate to top it with a bit of parmesan cheese ;)

    My favorite soups is probably either some kind of seafood chowder (anything with seafood, really) or beer cheese soup. (Cheese AND soup! Perfect comfort food!)

    Loaded baked potato soup - definitely an indulgence and a winter favourite when you need something warm and comforting….other than a pillow fort with a duvet and netflix.
