no bake maple almond energy bites.

I’ve seen just about hundreds of energy bite-esque recipes floating around the blog word and Pinterest, but I never knew which one to actually try making. So when I saw that Courtney from Sweet Tooth Sweet Life approved this recipe for No Bake Energy Bites, I knew it was the one to go with.

When I went to make them, though, I realized I didn’t have all of the exact necessary ingredients. So I made some variations from the original recipe, and the result was out of this world good.

ingredients:

  • 1 cup quick cooking oats
  • 1/2 cup ground flax seed
  • 1/2 cup shredded coconut
  • 1/2 cup slivered almonds
  • 1 tsp cinnamon
  • 1/2 cup almond butter
  • 1/3 cup pure maple syrup
  • 1 tsp pure almond extract

directions: In a large bowl, mix dry ingredients first. Then add the wet ingredients (almond butter and maple syrup) and combine well. Chill for 30 minutes, then roll into balls - I made mine the size of donut holes. Store in an airtight container in the fridge up to a week.

These really are the perfect snack, and even good for a healthy dessert. They also happen to be vegan and gluten free (if using gluten free oats).

I especially loved the flavor of the maple syrup combined with the hint of saltiness from the almond butter. Delicious!

    I love that this recipe does not include protein powder, it is a nice change. Oats are my favorite ingredient, they add some serious ‘umph’ and give that chewy texture that’s perfect for a snack.

    I’ve been seeing a number of sweet treat recipes floating around that use bananas. This one in particular I can’t wait to try:

    Two Ingredient Cookies

    -2 very ripe organic bananas
    -1 cup rolled oats
    -1/4 cup dark chocolate chips or dried fruit or nuts, hemp or sunflower seeds

    Preheat oven to 350 F
    Squish bananas with a fork, add in the oats and whatever else
    Scoop a tablespoon of batter per cookie & back for 13-15 minutes until golden.

    Yum! :)
