Want to know what one of my favorite foods is? Pizza.
Want to know what my least favorite vegetable is? Cauliflower.

That’s why – despite looking decent enough – this recipe I’ve seen countless times via blogs and Pinterest is one I’ve never attempted making.

Until yesterday.

I followed this recipe for the most part, but my ingredients varied a bit.

for the crust
1 pound of cauliflower
1 egg
1/4 cup grated parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon dried minced onions
salt and pepper

toppings
1/2 cup tomato sauce
5-6 thick slices of fresh mozzarella cheese
1/2 cup spinach

I followed these directions pretty much to the T, except I used a food processor instead of a grater. Also, mine made one large pizza instead of two (I think I used less cauliflower).

The verdict? Not bad at all! It couldn’t exactly compete with regular pizza, but it’s a great healthy alternative. I couldn’t really taste the cauliflower, and…well, there’s nothing a generous layer of mozzarella cheese can’t fix.

    I love a lot of healthier alternative recipes. Actually, I like a lot of Chocolate Covered Katie’s recipes with hidden chickpeas and tofu. They’ve all come out pretty tasty to me! And considering I like cauliflower, I’d probably like this!

    I’ve always wondered about this… I think I would love it, but I’m nervous to have my husband try it, he’s not as adventurous.

    I’ve contemplated making this for such a long time…I’ve just always been convinced that it would taste disgusting. I may have to give it a shot now though- at least to say I tried!
    Oh, and your totally right, cheese fixes everything.

    I’ve never tried a cauliflower crust pizza before because I’ve always been skeptical of it. I loooove pizza, so I figure why mess with an already good thing? But seeing as how everyone seems to like it, I’m wondering now if it’s worth a shot…

    My favourite healthy alternative recipe is Oh She Glows’ no bake date bars. They aren’t baked or made with butter like the traditional recipe, but they are seriously fantastic!
