First of 101 cookie recipes – check!

Last week I emailed author Wendy Paul to let her know about my little project. I also asked for permission to share a few of the recipes with you, and she was kind enough to allow me to do so – one cookie recipe from each of the book’s sections.
When I decided to start with this recipe for No-Bake Peanut Butter Cookies, I had a hunch it would be one that I’d want to share with you. Not only are these out of this world delicious, but they also happen to be easy to make and can be vegan!
no-bake peanut butter cookies.
recipe from 101 Gourmet Cookies for Everyone
ingredients:
- 1 cup raw sugar
- 1 cup butter substitute (I used 1/2 cup real butter)
- 1 cup soy milk (I used almond milk)
- 3 tablespoons cocoa
- 1/2 cup organic peanut butter
- 1 teaspoon vanilla
- 3 cups quick oats
- 1/2 cup shredded coconut
directions: Boil sugar, butter, soy milk, and cocoa for 1 minute. Add peanut butter, vanilla, oats, and coconut. Mix well. Remove from heat and drop onto wax paper by teaspoons. Cool and enjoy.
…and enjoy I did.

These. Are. Incredible. This recipe makes a huge batch, so I decided to freeze most of the cookies so they can last me a while.

how yummy!! these look like the perfect snack! when you freeze a cookie, how do you de-thaw it?! do you just pop it in the microwave?!
so far no need to thaw/microwave! they don’t get too frozen - just really cold and chewy/fudge-like
I love the idea of this project, I thin you’ll have a lot of fun with it! (and enjoy lots of delicious cookies). So nice that Wendy Paul is letting you post some of the recipes, looking forward to seeing more!
