I’ve mentioned about a million times before that I’m not chocolate’s biggest fan. I’ll reach for sugar cookies or blondies over chocolate just about 99% of the time.
BUT. I’ll admit that every once in a while, I do find myself craving a dense, fudgy, decedent chocolate treat.
Today was one of those days.

ingredients:
- 1/2 cup coconut flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1 stick unsalted butter, melted
- 1/4 -1/3 cup sugar (depending on how sweet you want them to be)
- 1/4 teaspoon vanilla extract
directions: Combine coconut flour, cocoa powder, and salt in a bowl, and sift with a fork to remove any lumps. Set aside. In a separate large bowl, whisk together melted butter, sugar, and vanilla. Then add the dry chocolate mixture and combine well. Use a tablespoon to make 10-12 brownie bites and then roll them into little balls. Place on a parchment or foil-lined plate, and freeze for 10 minutes before eating. Store in a tupperware the freezer refrigerator…if they last that long.

If you want to get really fancy, you could roll these in some crushed nuts, shredded coconut, or powdered sugar.
I guess you could also refer to these as “truffles,” but…brownie batter just sounds like more fun to eat, if you ask me.

Hi Alex! I can’t say for sure, but I’m thinking it *might* work…? The consistencies of coconut flour and peanut flour are quite similar. If you try it, let me know how it turns out!

Ah, I’m like you … 99% of the time, I reach for something more vanilla sugary v. chocolate, but these look amazing!
I also love that they don’t require a nut butter! I’ve been looking for some no bake recipes and most require nuts and sadly, I have a nut allergy.

Tried these tonight! I only had baking cocoa, not sure if it’s the same thing or not, and it wasn’t sweet enough for my taste so I upped the sugar to 1/3 cup and it was perfect! So yummy! Will definitely be making these more often.

Hey Ky! Yes - these are definitely not incredibly sweet (I prefer my chocolate treats to be more on the almost bittery side) so good call adding the extra sugar. I may add a note in the post about that, in fact! Thanks for the comment!
