best I ever had.

We’ve all had those meals that left us thinking daaaaaang that was good. Or, I could eat that every day for the rest of my life be perfectly content.

Even some of the greatest chefs have experienced this - you know, like the show The Best Thing I Ever Ate.

Girl, I feel you.

While I’ve definitely had some of the most incredible meals at restaurants, it’s especially pleasing when the best meals are ones I’ve made myself. Like this morning, when I made what was easily one of thee best breakfast sandwiches I’ve ever had.

I’m not exactly sure where this idea came from. But, I knew I couldn’t really go wrong combining three of my favorite foods and sandwiching them between two waffles (…then again, what wouldn’t be good sandwiched between two waffles?).

To make this bad boy, you’ll need:

  • two frozen waffles (I used Van’s)
  • 1/3 banana, mashed
  • 1/2 cooked sweet potato, mashed
  • 1 spoonful nut butter (I used peanut butter)

Start by using the microwave method to cook the sweet potato: pierce it with a fork, wrap in wet paper towel, and microwave for 6 minutes.

Next, toast the waffles until they’re nice and crispy. Top one waffle with mashed banana and the other with the sweet potato and peanut butter.

Then…well, do I really have to explain the next step? 😉

This was seriously one rockin’ sandwich. I ate it for breakfast, but it could easily work for lunch, dinner, or even dessert.

Now pardon me while I ponder the endless possibilities of waffle sandwiches to be made…..

    I need that sandwich in my mouth right now. WAFFLE lovin right there. Waffles with peanut butter is good. Waffles with peanut butter and banana is great. Waffles with peanut butter, bananas and SWEET potatoes is a whole new kinda food high.

    Ohh that waffle sandwich sounds ah-mazing! So many good options: dark choc pb with strawberries…or go for a touch of Victorian ie clotted cream and strawberry jam! Good call Gracie :)

    Banana, sweet potato and peanut butter are my favorite foods :) looks awesome.
    the best weird combo I had lately was apple and cheese wrap, grilled a bit to make the cheese melt. Delicious!

    That certainly does look really yummy. I don’t make totally creative things.. but I’ve been adding sun-dried tomato & mozzerella laughing cow cheese to my sandwich or turkey burger..and it is quite yummy!

    As cheesy as this sounds…waffle-wiches are.the.bomb. I will generally eat almost anything with a waffle involved b/c they’re just that good! I’ve never tried it with mashed bananas+sweet potatoes+nut butter yet so I need to get on that asap :)
