You know, I think that the old “good things come in threes” saying might have some merit.

three C’s.
Cranberry. Cashew. Coconut.
three ingredients.
- 1/4 cup dried cranberries
- 1/3 cup raw cashews
- 2/3 cup coconut butter

three steps.
- microwave the coconut butter in a small bowl or mug for 30-60 seconds.
- spread the melted coconut butter, cranberries, and cashews into a saran or parchment-lined cake pan.
- freeze for at least 30 minutes, then break into pieces.
(yes, I combined two steps on that last one, but a fourth would clearly ruin the entire theme

Yep, it is! I used to think that they’re the same, but they’re not at all. Coconut oil doesn’t even taste much like coconut! But coconut butter is more than just the oil - it’s the coconut “meat,” haha. I’ve only ever tried Artisana brand, which I’ve seen it sold at some health food stores and even a few Whole Foods! Otherwise you could check out http://www.premierorganics.org !!

I have never tried coconut butter, but this looks seriously delicious! I have just discovered banana soft serve which is the easiest and most tasty thing ever, not even 3 steps. I don’t know what took me so long, but I am addicted now!

Thank you for that recipe! I had to try it today and I am seriously trying my hardest to stay out of the freezer, it’s so freakin’ good! I didn’t have cashews or cranberries on hand, so I used walnuts, almonds and raisins instead. Holy deliciousness!
