pizza for one.

Pizza is easily one of my top three favorite foods. I just love it! Now that I’m living alone, though, there’s really no point in ordering or making an entire pie. I do love leftover pizza, but nothing compares to a just-out-of-the-oven slice. And, on a strict food budget, I need to ensure that I don’t waste any food!

So, I’ve found a way to not only enjoy my single serving of pizza but also to have future single servings ready to grab in a snap.

It started with a package of (2) whole wheat pizza crusts. Earlier in the day, I cut one of the crusts into four single servings. I stuck 2 slices in the fridge to grab for dinner later and the other 2 in the freezer.

I also froze the entire second crust, in case I have company and want to make a whole pizza down the line.

When I got home around dinner time, I was able to throw together a couple of semi-homemade pizza slices in a snap. While the oven was heating up, I topped the slices simply with tomato sauce and mozzarella cheese.

I baked the pizza for 9 minutes and ate it alongside some steamed & buttered spinach.

That is my kind of dinner. The crust was on the crunchy-side, but still tasty enough.

And now - if I want the same thing for dinner tomorrow - it will be easy to do again, but I’m not forced to eat leftovers. Best of both worlds, I tell you!

I might try a different brand of pizza crust in the future. Any suggestions?

    I live alone too so I know exactly where you are coming from! Here is my go-to recipe for nice thin crust dough (I actually had this tonight! haha): http://smittenkitchen.com/2007/01/pizza-and-the-limits-of-diy/

    It’s super easy and I usually eat half the pizza and have the rest for lunch the next day! If you prefer a thicker crust, you can easily double the recipe (which I have done in the past and it worked out just fine!). I have also frozen the dough (if you prefer no left-overs) and it worked out fine too - just stick it in the fridge to unthaw during the day and there you go! Have fun experimenting!

    that looks tasty! I use pita instead of dough when I want a quick single serving pizza-like meal! But I will try your approach, I much prefer the taste of actual dough.

    I’ve bought the whole wheat pizza dough balls from whole foods before! I divide it so that I have enough to make individual pizzas and freeze the ones that I don’t use, then I just thaw them as needed. Naan works well too!

    That looks delicious! I usually buy TJ’s ww dough and freeze it into single sized portions. It takes longer to cook, but it’s only 99 cents for 8 single portions!

    It sounds like you’ve got a handle on the dough, but I always have a lot of leftover pizza sauce (and will chop extra toppings). I put it on an English muffin and pop it in the oven for a lunch. yum!

    That is pure genius! Sometimes I crave pizza but I hate ordering a whole thing since it’s usually a one night kinda thing but this keeps me from having to eat leftovers while still letting me have pizza whenever I want (plus its healthier than takeout). You are brilliant Gracie :)

    Good idea! I am just about to move out for the first time and must admit I am worried about food budget. It will be a big adjustment going from a full pantry with mum cooking every night…

    My cousin’s boyfriend makes homemade crust which is amazing! I wish I would take the time to learn how to do it. He even throws the dough up in the air during the process.

    I’m in the mood for pizza. Maybe I will make one tonight since it’s so snowy outside. Pizza and wine sounds like a lovely cozy meal.

    I do the slice and freeze tip myself! Sometimes I also slice the crust into different pieces to get a variety of topping without too much flavor overlapping. I did this over Christmas Break and turned 1/3 of a pizza crust into 3 different slices - veggie overload, buffalo chicken, and a sauceless, garlicy, cheese slice (which was like cheesy garlic bread!) YUUUUUUMMMMMMMMMM!

    I love buying 99 cent TJs whole wheat pizza dough, portioning into mini ziplock bags, and freezing them. One bag of dough will last me forever!

    I just wanted to say that I made homemade pizza for lunch today (with alternative pita bread) and topped it with pizza sauce, cheese, and blended up cottage cheese. It looked exactly like your pizza above and it was so good! When I saw yours I just thought that was what you did, but sometime you should try it. So yummy!
