Am I the only person who opens a can of pumpkin and then scrambles for ways to actually use it…? I never thought I’d say this but, I’m getting quite sick of pumpkin oatmeal and pancakes. I can’t complain, though, because I’ve been inspired to produce delicious creations like this.

Pumpkin ice cream is easy-peasy to make. The process is exactly how you’d imagine it to be.

First, put a scoop or two of vanilla ice cream in a bowl and microwave for 10 seconds. Next, trust your eyeballing instincts and add a big spoonful of pumpkin along with generous sprinkles of cinnamon and pumpkin pie spice.

Then implement your childhood ice cream soup-making skills.

Place bowl back in freezer for at least 10 minutes before digging in or transferring to a prettier bowl. Add toppings of your choice.


Clearly I’ve been looking for excuses to use these fall-ish sprinkles *cough* impulse purchase *cough*. There could be worse problems

Yum! I usually end up making a pumpkin smoothie or pumpkin muffins. I’ve been wanting to make pumpkin cookies, so that will probably be where my next can ends up!
I’ve been making pumpkin chia pudding with my leftover pumpkin lately - it’s delisssshhhh!

I tried pumpkin one day in the form of pumpkin oatmeal. I didn’t really like it. I guess I’m mainly a pumpkin fan when it’s sweet, like in pumpkin pie, and I don’t really want to start adding sugar to my oatmeal just so it can have pumpkin in it. But it looks awesome in all these different recipes that people try.
Leftover pumpkin tastes great in chili, oats, cookies, in dog food (for the pup!)

Love this idea! I can never get sick of pumpkin oatmeal/pumpkin yogurt messes, but it’s definitely always great to find new uses for pumpkin. 😀

Sick of oats and pumpkin?! o_O. Just kidding, I’m sure the time may come for me some day, too..*some* day. 😛 I use leftover pumpkin in baking a lot. It gives the goods such a moist texture!
