chocolate banana date pancakes.

Hihihi dollbabes. I’ve been meaning to say thank you for all of the kind words about the new header! “It’s so you” has got to be the best compliment because that’s exactly what I was going for :)

I woke up this morning with just enough time to make myself breakfast; make that – an insanely phenom breakfast.

You see, since I no longer have the “pressure” of posting all of my eats, my meals aren’t nearly as creative as they used to be. And breakfast? Well, let’s just say that Starbucks and Dunkin Donuts provide me with my first meal of the day 2-3 times a week. I can’t say that I have a problem with this (other than the money I spend doing so), but a home cooked breakfast was definitely overdue.

Chocolate Banana Date Pancakes (yields 1 serving)

ingredients:

  • 1/3 cup whole wheat flour
  • 3/4 tsp baking powder
  • 1/2 medium-sized banana, mashed
  • 1/4 cup milk (I used almond milk)
  • 2-3 dried dates, chopped
  • 1 tbsp dark chocolate chips
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1 tsp ground flax (optional)
  • sprinkle of sugar or stevia (optional)

directions:

  • Pre-heat a greased pancake griddle to medium-low heat.
  • Begin by combining the flour, baking powder, cinnamon, salt, flax, and sweetener.
  • Stir in the milk and mashed banana (batter will be thick).
  • Add the chopped dates and chocolate chips.

  • Pour batter onto griddle, flatten it a bit, and cook for about 3 minutes per side.

If you’ve never added mashed banana to pancakes, you must! I know you can’t beat classic light/fluffy pancakes, but the moistness and ooey-gooeyness that mashed banana adds certainly competes. The chew of the dates and richness of the melty chocolate certainly doesn’t hurt either.

I topped the cakes simply with some butter. Syrup or nut butter would be delicious too.

    So I was all excited about my new overnight oats combo and then you pop up with this delectable looking creation, Miss Thang :) They look amazing. I think when I’m home over Thanksgiving we should get together and have a baking party. Thoughts?

    delish! I have all these ingredients and need to make some pancakes to switch up my usual bowl of oats. I almost always have breakfast at home unless we’re traveling…

    I always make my own breakfast because for 9 more days I have to weigh and measure everything I eat. I’m excited to start enjoying healthy but DELICIOUS breakfast foods after this competition and bring back fruit for breakfast. I’ve never mashed bananas in pancakes but this is definitely going to be happening in, oh, about a week!!! Thanks for the idea;)

    Mmmm! these look great! I don’t usually have the time to make alot for breakfast, its usually quick bowl of cereal or instant oatmeal. I used to stop and get breakfast almost every day when I lived in Philly, mostly because it was so convenient, but now that I have to drive to work I eat breakfast at home. It balances out the budget too now that I’m spending more on gas.

    I love making my own breakfasts because honestly, it’s about as close as you can get to making dessert without actually calling it dessert…like your pancakes ;) Subway’s fresh and fit brekkies are awesome though when I’m in a rush and feeling lazy!

    I make my own breakfast every single morning. I wish I could afford to drive thru every morning! Nothing beats a Dunkin Donuts toasted almond coffee and one of those delightful little egg & cheese wake up wraps.

    Who am I kidding. It’s all about the sausage, egg & cheese McGriddle. :9

    But yeah, it’s always a bagelwich or oatmeal at home. Boring!
