no fresh food? no problem.

Hi dollbabes! Hope you’re all enjoying this holiday weekend :)

After a great day in the city, I’m back home in good old Pennsylvania. I was pretty hungry by the time I got home, only to find that there was barely any food in the kitchen. I didn’t feel like going to the grocery store, so I tried to make do with what I could. The result? One of the best dinners I’ve made recently.

I started by boiling this kamut pasta, which has been sitting in my HLS swag bag for weeks now.

Then I jazzed up a can of plain tomato sauce by adding salt, pepper, garlic powder, dried basil, and 3/4 package of thawed frozen spinach.

After heating the sauce through for a couple of minutes, back into the pot went the pasta, 2 sliced Jennie-O turkey meatballs, about 1/2 cup chick peas, and topped with parmesan cheese.

Who would’ve guessed this dish was made of frozen and canned foods?! Not only was this delicious, but it was also super filling. Mental note: have frozen spinach on hand at all times.

Rewind to around noon today, when Gabriela and I met up with my Long Island lovah Amanda. The three of us headed straight to lunch at Whole Foods. I had brown rice avocado + cucumber sushi:

After about 30 minutes of walking and an hour or so of shopping, we all decided to sit down and rest for a bit. And when I say rest, I actually mean eat the biggest, most delicious cupcake I’ve ever had.

The cupcake pit stop took place at Crumb’s Bake Shop. With varieties like Samoas, Half Baked, and Red Velvet, it wasn’t easy deciding on a flavor…

…but I ended up going with the Cookie Dough Cupcake. It was a baller decision, if I do say so.

See? I wasn’t kidding. Best. Cupcake. Ever.

Good company, good food, good weather, and a successful shopping trip? I’d deem today a great one :)

    OMG I had Whole Foods for lunch the other day and it was quite possibly the best lunch EVER!! As far as canned goods go, I always have canned tomatos, tuna, chickpeas, kidney beans, and pumpkin. Oh, and there’s always gotta be spinach in the freezer in case of a green monster craving (which hits at least once each day!) :)

    Canned tomatoes of all kinds depending on if I’m in the mood to make sauce, or in the mood to be lazy and top it with diced tomatoes. Frozen organic waffles are also a must :)

    My boyfriend recently brought me Whole Foods brown rice sushi for a picnic lunch at my work, and I was pleasantly surprised at how delicious it was! They have a mighty good selection there, too, and it’s nice to know that it’s all freshy fresh.

    That cupcake is no. joke. Did you eat the whole thing?! If so: you rule. 😀

    I always have frozen veggies of some kind. I’ve had some butternut squash chillin’ (no pun intended) in the fridge for like two months. Still deciding how I’m gonna use that… I was also feeling saucy and bought some frozen brussel sprouts the other day. I still haven’t decided how I’m going to use them. Roasting frozen veggies is a no-no, right?

    Oh my-that cupcake! I don’t really like cupcakes, but that looks like a winner for sure! I always keep frozen veggies like spinach or green beans around-they are great in a pinch. Or when I am being lazy :)

    I am totally at a loss for cooking meals when I don’t have any fresh ingredients on hand! I always have canned beans, pasta sauce, frozen spinach and frozen corn, but I never feel like I can make a good meal without fresh produce. Your pasta dish looks super satisfying though!

    Nicely done, my dear! I hardly buy anything frozen but I always keep a few cans of Muir Glen soups on hand for when I’m outta the fresh goods. Your sushi looks fab, btw! I was supposed to go get some yesterday but they were closed for lunch…so I’ll just have to live vicariously through your blog!

    Oh my gosh wow. That cupcake looks delicious!! Especially that icing, it’s very creative that it’s not just a plain icing. Looks like cookies are mixed up in it or something. I want to eat that cupcake off the computer screen!!!

    Your so resourceful with your foods I wish I was more like that! Omg, crumbs cupcakes are delicious! I had them once and I too chose the cookie dough! The chocolate right in the center was delicious! Great choice! =)

    I’m not sure about roasting frozen veggies! I would assume that if you did, let them thaw first!

    i ate a vegan cupcake today and it was delicious. i think i need to start incorporating at least one cupcake into every weekend…makes life so much better. i had so much fun this weekend!! and i’m about to use your placemats when i take a pic of dinner :)

    as for frozen, besides my favorite thing ever (Amy’s Kitchen meals), I usually always have frozen broccoli in my freezer. I like frozen much better than fresh (once it’s cooked!!) and it’s super easy to make!

    mmm I loove Amy’s foods! They’re perfect when I’m going off to work and I don’t have any time to make food for myself. Also, frozen berries! When thawed, they’re super squishy and sweet!
