HI DOLLS! Hope you all enjoyed this last August Sunday :) I spent the afternoon on another date with my momma. We went to Sunset Beach, which is a popular tourist spot in Cape May. It’s home of the “Cape May diamond” and this near-shore shipwreck.

Even though I’m really looking forward to the fall, it’s been nice to soak in these last few weeks of summer!

You know, despite my love for it, I don’t eat oatmeal nearly as much as the next blogger. It just doesn’t seem to fill me up as much as breakfast options like eggs or loaded (Greek) yogurt. Even with yogurt or protein powder added, I’m usually hungry within about two hours.

For that reason, along with the fact that I feel rebellious for breaking the ridiculous “no carbs after 5pm” rule, I generally prefer eating oatmeal for dinner. And tonight’s dinner? Holy mother of oatmeal goodness! (…pretend I didn’t say that.)

Sweet Potato Pie Oatmeal.

ingredients:

  • 1/2 cup dry regular oats
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/2 cooked sweet potato
  • sprinkle of chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • sprinkle of stevia

toppings:

  • marshmallows or “fluff”
  • crushed nuts (I used walnuts)

directions: Peel and mash the cooked sweet potato with the back of a fork. Combine the oats, water, milk, mashed sweet potato, and chia seeds in a pot and turn burner on to medium-high heat. Whisk/stir as much as possible until the mixture thickens. Turn burner off, mix in cinnamon, vanilla, and stevia. Transfer to bowl, add toppings, and envision Thanksgiving while digging in :)

Not only was this insanely good (hello melty marshmallow!), but the sweet potato definitely added some extra full-ness factor. Now that’s my kind of oatmeal.

    Too funny - I just had oatmeal for dinner too. I eat it everyday for breakfast for the most part, so this morning even though I had pancakes I felt that I had to have oatmeal for dinner or my day just isn’t complete, LOL

    First: Your pics are so pretty! :D
    Second: Last year, I ate oatmeal for breakfast about 4 days a week, and then I got completely SICK of it. I think I had them for the first time (in a very, very long time) the other week. It was a nice change, but it’s too heavy on my stomach for summer..I like a light meal to go with hots days :)

    Looks good!! :) I don’t eat oatmeal nearly as often as the next blogger either - for the same reasons as you. When I do, I add protein powder to it, and occasionally pumpkin if I have it in the house because it adds volume and reminds me of Thanksgiving!

    Time goes by too quickly. Although I am happy that Sep 1 is this week. I’ve been excited for it for too long!! :D

    I like to add some nut butter for staying power. If that doesn’t work for you, how about cooking oatmeal with milk (or milk sub) instead of water?

    SWEET POTATO IS SO GOOD IN OATMEAL!!! When I make oats, I love adding LOTS of mix ins. Banana, nut butter, chia seeds, granola, berries…just as much stuff as I can fit!! It definitely makes an awesome base :)

    Oatmeal add-ins I use to make it more satisfying:

    A couple of tablespoons of:
    - egg substitute (for protein)
    - PB2 (or peanut butter, depends on your desire/need for lipids)
    - cottage cheese
    - honey-nut flavored cream cheese
    - crumbled granola bar

    I eat oatmeal almost everyday! Especially if I’m at home. Some typical add-ins for me to bulk it up: banana, granola, almond milk, nut butter or pumpkin among other things. LOVE oatmeal.

    I love to put ground flax seed in my oatmeal. That is the perfect pre-race meal in my book. Then I top it with a little real maple syrup and am off.

    Dave and I went to Cape May for our honeymoon! Sunset beach was our favorite spot! I love all of the food in that town, too! SOO GOOD!

    How often— too often. I could be an oat. I always add fruit or yogurt to help fill me up.

    Sweet potato MUST have marshmallows, so glad you topped it with that. What a unique flavor combo, but just in time for the holidays, lol.

    I loove oatmeal. I love adding fruit to mine, but the possibilities are endless. I need to get sweet potatoes so I can try this because it looks amazing! A combinations of 2 of my favorite food: oatmeal and sweet potato.

    I love pumpkin in my oatmeal, but I’ve never tried sweet potato. This looks amazing though! :D

    I add a full banana, berries, chia seeds, granola, and a nut butter to my oatmeal, which keeps me pretty full! Sometimes for extra staying power I’ll also add flax seeds and wheat germ to the base.

    Sweet potatoes and oatmeal is the best idea I’ve ever heard! I wonder how it would taste with almond butter!

    I always use the KERF oatmeal recipe (with 1/2 banana added when cooking) plus 1 heaping T of cottage cheese stirred in at the end .. Yum! :-) And then 1 t of each coconut butter and almond butter on top! At least 5 days a week :-) Best staying power!

    Well I need to say I don’t like oatmeal. I only eat them when my mom asked me to. Yes, she would sit next to me, wait for me to finish my oatmeal like I’m a 5. I eat them but just that’s it. I love even much better to not eat them lol. But once my mother made this oatmeal with soy milk, and slice of fresh and sour fruits (she knew I love sour fruits), I started to think I like this one. But just this, only this style of oatmeal.
    I will pass this recipe to my mom. Let’s see if this could go well to my taste. Thanks.
