delicious accident.

HI LOVES! Uh…whoa. Talk about a crazy day. I feel like I’ve been working/running around nonstop, yet nothing seemed to get done! Let’s just say I’m definitely looking forward to some R&R and unplugging tonight.

first workout in…?

I paid a much-needed visit to the gym today, and it was just okay. I guess I just didn’t realize how much I dislike the gym during the summer months. But, since I haven’t had a *real* workout in over a week, I’m glad I went. I rock a BFYB workout, which included:

  • 25 minutes strength training. BING.
  • 10 minutes elliptical. BANG.
  • 5 minutes stretching. BOOM.

dinner: sushi takeout.

Since I just got home yesterday and am leaving town again tomorrow, the house isn’t exactly well-stocked in the food department. But…hey, I’ll take any excuse to get sushi for dinner ;)

I got the usual: an avocado roll, tuna roll, and salmon roll.

This dinner didn’t exactly add to my already lacking vegetable quota for the day, but one day won’t kill me.

lunch: batter bowl.

The lack of food in the house actually led to an insanely tasty concoction for lunch. I pretty much threw everything I did have into a bowl, and the result was nothing short of miraculous.

I’m not really sure what category this falls under. Overnight oats? Loaded yogurt? Eh, maybe, but the consistency is much more batter-like.

To make this delicious mess, I combined:

  • 1/4 cup regular oats
  • 1/4 cup plain Greek yogurt
  • 1/2 cooked sweet potato
  • about a tablespoon dried cranberries
  • sprinkle of chia seeds
  • topped with Butter Toffee flavored almonds

I think it was the combination of oats, yogurt, and sweet potato that lended the thick, batter-like texture.

It also made for a surprisingly filling lunch. Goodbye delicious failure, hello delicious accident!

  • This was my first not working in a gym, so I was used to just being there in the summer. I don’t mind since i go first thing in the morning, but I could NEVER have done it if I went in the evening.

  • Well I work in a agym so its hard to avoid it LOL but for the purpose of the questions I will answer as if I didn’t work in a gym. I def take advantage of the outdoors more in the summer time with my workouts! although I love my weight training so much its hard to avoid the gym completely! love yoru delicious accident!

  • I’m with Naomi- I luuuurve my strength training so I love to be in the gym *any* season. I can’t say the same for cardio. I really dislike doing cardio:(

    I had a delicious accident last Thanksgiving when I made my signature dish “Sweet Potato Casserole” with marshmallow and pecan praline on top. Somehow it turned out uber runny, but everyone LOVED it and sipped it from their bowl like soup HAHA! I was mortified but everyone thought it was like a delicious, candied soup:)

  • I love random bowls like that! Mine usually has a big spoonful of hummus mixed in for creamy goodness and maybe quinoa as a base. Sweet potato sounds like a perfect addition.

  • That is awesome that it worked out! I miss the gym at my college town, so all of my strength workouts are in my room and all of my cardio is on the pavement. I’m not the biggest fan of it :/

  • I normally don’t mind the gym too much, although it can bee really hot in the summer. I love people watching so I always find that an entertaining thing to do while I’m on the treadmill!

    I have delicious accidents all the time when I’m cooking. I don’t normally work from recipes so I never really know how something is going to turn out until I eat it!

  • I do dislike going to the gym in the summer - I use it soley for cross training to supplement my running. Being outside is so much better!

    My las delicius accident resulted in a yogurt/peanut butter concoction similar to your almond mousse. Needless to say, I eat it almost every night now!

  • I was so bummed that I missed the first 30 minutes of the show! The DVR of course decided to not work then. Grrr.

    That bowl does look great. I love when things happen to work well like that.

  • I don’t really like going to the gym in the summer when it’s light outside. Hence, my gym workouts when I teach cycle or take Body Pump happen at 5:30 AM. :)

  • I love going to the gym in the summer. I’m sooo thankful to get out of the sweltering heat and be able to run in the air conditioned gym!

    Your lunch looks good! I really want to try sweet potato in oats/yogurt.

  • I love to take advantage of being outside, but it just depends on how hot it’s getting.

    Are you the new spokesperson for Sweet Potatoes? I think they need you.

    Most of my accidents would never turn out this tasty.

  • I definitely prefer outdoor sweat sessions. But the heat around here is just too ridiculous, so I have no choice but workout inside (running at 3 in the morning is not a great idea…)

    Thank goodness that I just moved back into my apartment, complete with a treadmill, elliptical and weight machine. What more does a girl need? (Answer: Peanut butter and chocolate, but that’s another story.)

    I actually do like the gym during the summer simply because it’s so crazy hot and humid outside, the gym actually allows my body to feel normal and function properly!! If weather weren’t an issue, I’d much prefer the outdoors.

    Delicious accident: flourless pb cookies that I had to bake twice. 1st bake looked done, wasn’t at all. So I rolled ‘em into balls, baked again, and voila: the most caramel-y, crunchy on the outside, delicious cookies EVER. :)

  • That “accident” looks fabulous! And hits so many nutritional needs.

    Prefer outdoor workouts and spoiled by SoCal weather so I don’t have to be a gym member. Last “accident” was protein balls that didn’t set so I baked them into cookies.
