Lawng Island lovin'.

GOOD MORNING from New York! Long Island, to be precise :)

Yesterday around 2pm my friend Erica and I set off to spend the weekend at our friend Amanda’s house. The three of us became great friends in college but haven’t seen each other since December! So, needless to say this weekend was long overdue.

Unfortunately, due to some bad directions, a lack of a GPS, and horrible New York traffic, our supposed 2 1/2 hour-long trip turned into just about 6 hours. Yes…six. hours.

It was all worth it, though, because the three of us had the most amazing night together! We had dinner at Don Ricardo’s, which is a phenom Mexican restaurant. Didn’t I have gorgeous dates?

After the long car ride I was starving, to say the least. I ordered my favorite Mexican feast - chicken fajitas. And it hit. the. spot.

The meal came with the usual suspects: flour tortillas, rice, refried beans, sour cream, and guac.

I made myself a “salad” of sorts:

I ate just about everything, sans the rice and most of the flour tortillas.

After dinner we met up with Amanda’s boyfriend Justin and then hit the town.

Let’s just say there was a cover band and some serious “Cameron Diaz dancing to ‘Mr. Brightside’ in The Holiday” going on :P

So far this morning has included coffee (or, should I say cawfee?)

Breakfast was quite the treat. Have I mentioned that Amanda’s house is pretty much a food blogger’s dream?

Look at all of those goodies! I put together a refreshing bowl of yogurt with berries, walnuts, chia seeds, and almond butter.

We also packed our lunches for later. I made a turkey + hummus sandwich on a FlatOut Fold-It (how cool are these?!).

    i SOOOOOOO want to go to the beach! the worst road trip i ever EVER had was with one of my old roommates…we got in a big fight right before driving home, so that 6 hours back from austin was hell! no bueno…

    I was once stuck in the road with a FULL bladder…and the road was bumpy. I was practically crying! Enjoy yourself at the beach!

    Oh, and I order anything greasy and messy and cheesy in Mexican restaurants. :D

    Ahh looks like such a fun night out!! Bummer about the traffic though…the last time I went to LI, we left from Cape Cod at about 4 am and didn’t make it there until 11. Traffic is ALWAYS a killer! Favorite Mexican food = anything with guacamole in it. Or salsa :) Hope you have a wonderful day with your friends love!!

    I am SO sorry about your long trip! I’ve had a 4 1/2 hour trip turn into 8 hours because apparently Oregon drivers can’t drive in the fog. It was 11:00 PM and I was stuck behind cars going 20 MPH for 3 hours. I thought I was going to go crazy.

    Anyways. I laughed so hard when I saw CAWfee. My friend from New Jersey would always say CAWfee.

    Nothing is worse than getting lost on a trip! My husband HATES getting lost he gets really angry and in turn makes me angry so if we ever get lost on a trip it does not go well! Luckily now we have GPS so getting lost doesn’t really happen much anymore!

    Sorry that you had such a long trek yesterday. Six-hour car rides are ONLY ok when they are anticipated. At least the destination was worth the fuss! Looks like you are having a lot of fun, and I am incredibly jealous of that breakfast spread.

    I haven’t had many bad road trip experiences, thankfully! I also haven’t driven a car in about 5 years though (livin’ in NYC and all…) :) One thing I must have at Mexican restaurants - gauc!

    Aww how FUN!! you and your friends are gorgeous!! I always order chicken soft tacos at mexican places! its a staple. ROAD TRIPS ROCK!!!

    Wooohooo Long Island, my roots. :) Looks like so much fun!!! I love catching up with college friends. I can’t believe it took you 6 HOURS!! That’s so crazy. Even though I remember a drive from the shore back to LI took my 5 once because of traffic. That was not fun!

    Oh my gosh, you want to talk about bad road trip experiences? My two besties from college decided to go on a road trip to St. Augustine two years ago. What should have been a four hour drive took us seven; we got a flat tire, a parking ticket, and a horrible set of matching sunburns; Travelocity booked us the wrong hotel; one of the other girls almost got carried out to sea in a rip current. But you know what? It was so horrible it was funny! We love to joke about it…now that we survived it!

    I’ve definitely gotten lost on a road trip before and had to call my mom for help, since I didn’t have a GPS!

    I like to order chicken fajitas at Mexican restaurants too. With heaps of guac!!

    Sounds like a great weekend with your girls!
    I had a great spanish restaurant dinner a few weeks ago, can’t stop thinking about it! It was a seafood spread with prawns, scallops and muscles with rice and guac and veg, healthy and light but total YUM!

    Wow! Those flat fold up things are trippy! I had no idea those existed but that’s actually a really sweet idea.

    I’ve had a sort of horrible road-trip but it was actually kind of fun. Last summer I was supposed to go to a farm in Alberta and learn to train horses but when my mom and I arrived there.. it was.. kind of nightmarish. It was raining, there was mud everywhere and it was the houses were HORRIBLE. Run down, dirty little trailers. It was scary. Kind of like Deliverance.

    Ahhhh, good mexican can turn any bad day around, I swear ;) I usually order frajitas (chicken or shrimp), or a taco salad (with grilled chicken), and usually a side of refried beans (yum) and ALWAYS a margarita on the rocks ;) I like getting margaritas from good mexican restaurants because they don’t have sour mix and other fake sweeteners (aka not 900 calories per rita), LOL.

    mexican is the best! what a lovely looking time.

    did you go to long beach? i was just there last weekend. it was soooo hot but the waves were SO rough they kept making us get out of the water. hope you had better luck!

    Oh looks like a great trip even though the trip there was horrible.

    I always struggle at a Mexican restaurant. I’m suck a piglet when I go out so I have to hold back. I’d go a taco salad of frajitas.

    Ahh, that sounds horrible! But it is definitely a funny memory!! My friend and I have already started joking about our roadtrip-gone-bad too :P
