I woke up this morning craving a big, fluffy muffin. I wasn’t about to waste half a day’s worth of calories on a muffin from Dunkin Donuts or Starbucks, so I took matters into my own hands.

Peanut Butter Oat Bran Muffins
(yields 6 jumbo or 12 regular-sized muffins)
dry ingredients:
- 2 cups oat bran
- 1/3 cup NuNaturals Erythritol Crystals (or 1/4 cup sugar)
- 2 tsp baking powder
wet ingredients:
- 1 cup milk (I used unsweetened vanilla almond milk)
- 1 egg
- 1/4 cup + 1 tbsp smooth peanut butter
- 1 tbsp maple syrup
Preheat oven to 425 degrees. Line muffin pans with baking cups or spray with nonstick spray. Combine dry ingredients. Whisk together wet ingredients in a separate bowl. Add dry ingredients to the wet ingredients, which will make for an oatmeal-like batter.

Pour batter into muffin pan, and bake for 15-21 minutes, until a toothpick comes out dry (the jumbo-sized muffins require more time). Let muffins cool in pan for 1-2 minutes, then transfer to cooling rack.


I immediately dug into one for breakfast.

YUM!! The muffins turned out super moist and not too sweet. I added a smear of butter for some extra fat-action.

With the jumbo muffins clocking in at about 220 calories and the regular-sized at 110, these are definitely a better option than what the coffee shop or bakery has to offer. Not to mention they’re full of healthy peanut-buttery oat-branny deliciousness…!

Mmmmm! Muffins are amazing, and I love when people like you and me make an effort to bulk ’em up a little with things that are good for us: healthy fats, proteins, whole grains, lots of fruit, seeds, etc…
Can’t wait to try these! I’ve got a pretty good one on my site, too, for apple cinnamon muffins made with whole wheat pastry flour. They don’t taste healthy at all… muffins, yay!

I love all types of muffins…carrot, banana, blueberry, corn…all so good! I can’t believe those crazy calorie dense muffins out there these days but I think sbux might have some under 300 or maybe 400…I can’t remember but I saw in NY where they label all the foods.
I love blueberry muffins best, but these look awesome. I crave muffins a lot but I never bake them. I’m not quite sure why.
These look fantastic!! I am so going to make them. I love muffins but hate that they are so high in cals! Its frustrating that places won’t make them healthier!!
I LOVE muffins…but avoid storebought because of the calories! I like making my own also, these sound delicious!

I wouldn’t say no to a 500-600 calorie muffin if it were full of good stuff like whole grains, nut butters, dark chocolate, etc…but most of them are full of sugar and other crappy stuff. These look like such a good alternative! I must admit though, cupcakes are a whole ‘nother story…
As for the shore meetup, DEFINITELY!! I won’t be down the next few weekends because of wedding stuff (shower/bachelorette party etc), but let me know what your schedule is like in July!!
I don’t think I’ve ever had a PB muffin, or oat bran for that matter. I think that means I need to try them.
I never was a muffin person, but I would have to say blueberry or chocolate chip. Yum!

Dunkin Donuts pumpkin muffins are my jam, but they’re so much harder to enjoy now that NYC requires them to post the calories! Seeing that you’re about to consume 560 calories of delicious junk makes me think twice about it. I guess I’ll spend this fall/winter perfecting a healthier recipe for my own pumpkin muffins!
500-600 calories is a lot for an everyday muffin, but every once in awhile it’s A-OK for a treat!
WHat concerns me is this: how is 500-600 calories “half a day’s worth of calories”?!?!?!

That recipe looks great! I would probably never purchase a 600 calorie muffin from Dunkin. I am a sucker for chocolate chip and blueberry muffins though!

I loooove bran muffins! My mom and I used to have those huge Entenmen’s bran muffins with globs of PB for breakfast, so they remind me of my mom and being a kid :0) And also these BOMB oatmeal raisin muffins a grocery store near me makes. I hate that muffins from stores have SO many calories and sugar

Hi Gracie. I wanted to thank you for answering my sunless tan questions. I ended up ordering the st.Tropez mousse and applicator mit. I just wanted to let you know (or your readers) that a good, less expensive option for broad spectrum (UVA to UVB) is Neutrogena Ultimate Sport and Sport Face. I use them everyday, even in the winter. They are awesome and I usually get them for around $10 a bottle (tube). I have similar skin type/coloring to you and it never causes breakout and lasts forever. It’s also SPF70.

one more thing! toliet seat covers are exactly the same thing as oil free wipes!! sounds gross (I guess?), works really well and is free (at least at my office bathrooms).
