Well I’m just on a posting roll today, huh? Maybe that’s because I have so many delicious eats to blog about :)

When I got home from the gym today I decided to finally make a batch of Julie’s Flourless Peanut Butter Cookies, which I’ve been wanting to make forever. And oh. my. goodness. These were to die.

…Not to mention I was able to tell my dad that I made cookies for him, muaha ;)

**Tip: when making cookies, use a melon-scooper to form the cookie dough. This way, all of the cookies will be the same size and cook evenly. For these cookies, I pressed the dough down and made grooves with the back of a fork.

For dinner I made PIZZA! I used Trader Joe’s whole wheat pizza dough and topped it simply with olive oil, garlic, tomato sauce, and mozzarella cheese.

Remember “personal pan pizzas” from Pizza Hut? Well, I loved them as a kid. Who am I kidding? I still love them! So, that’s what I was going for with this baby.

The dough was super fluffy, and it had a great nutty flavor.

Today at the gym I did what I’m now calling a Bang For Your Buck Workout.

What is a BFYBW, you ask? It’s quite simple, really. Instead of doing hours of low to medium intensity exercise, you do a shorter, more intense workout. For me, that means a workout consisting of mostly strength training and HIIT (High Intensity Interval Training). For example, today’s workout included:

  • 25 minutes strength training (using the heaviest weights I could)
  • 10 minutes HIIT on the elliptical trainer

That’s it! And I kid you not when I say I was dripping sweat at the end of those 35 minutes. After a quick stretch I was out of the gym and feeling great.

Don’t get me wrong. Sometimes I enjoy a long bout of cardio, and hour-long Yoga classes are my exercise of choice. But when I want to get my fitness on without having to carve out an hour or two, Bang For Your Buck Workouts are the way to go.

  • Those peanut butter cookies are the bomb. Anything that’s that easy to make and tastes so delicious just has to be!! The intensity of my workout depends on my mood. Some days I like slow and steady, while some I just like do get done in a burst of high energy. Variety is the spice of life, right?

    Favorite pizza toppings are roasted veggies. They add so much bulk and flavor! Especially artichokes and tomatoes. Yum :)

    Those cookies look delicious - and so cute with their little fork marks!! I love it, classic PB cookie :)

    My mom and I recently found the BEST whole wheat pizza dough recipe (it’s from eating well) and have been going crazy with the toppings - our favorite so far has been chicken cooked in rosemary, spinach, and a “sauce” made from white beans pureed with garlic and olive oil. Soo good!
    Other favorites - BBQ sauce mixed with grape jelly, cashews grilled chicken & cheeeez.
    - Pineapple, ham, green peppers, monterrey jack

    Just go crazy! :)

  • Not gonna lie, I seriously miss me some Pizza Hut. Though I think I’d choose your homemader over it right about now! And I definitely have that cookie recipe bookmarked to make asap.
    Also a big fan of the bang for buck workouts. I love HIIT a LOT. Especially when I’m not hugely in the mood to workout, those quick bursts just seem so much less daunting and so much more doable.

    I need to make those cookies, asap. I have a jar of peaunut butter waiting..its been on the ‘need to bake’ list for awhile.
    maybe to wash down my seaweed tuna salad combo with lots of rando bit and pieces. I do believe my taste buds crave random combos.
    they sold those personal pizza’s at my middle and higschool for $3. the good ol’ days.

  • Peanut Butter cookies are my favorite thing on the planet. Therefore, they make a super rare appearance and when they do it’s short lived ;) I haven’t tried these yet but have seen them about a million times… maybe the universe is telling me something??

  • I love a mix of both bang-for-your-buck workouts and long workouts. When I haven’t worked out in a while, or I have a ton of extra energy I actually combine the two. I do a circuit with sprints, intervals, the elliptical, spinning, and plyometric with walking in between to get your heart rate down. It lasts for about 1 1/2 hours but it’s a great shock to your body.

  • I’m a huge fan of an hour long low intensity work out but my trainer decides.

  • Those cookies look fantastic! I hear that HIT is totally the way to go but I’m usually a long low intensity kinda girl.

  • Aren’t those cookies amazing?! I’m a flourless peanut butter cookie addict…I’ve been averaging a batch per week! I also enjoy making them with almond butter or dark chocolate dreams! Mini chocolate chips are a great addition too. :-)

    I like to do both high intensity and low intensity workouts…It completely depends on my energy level and mood.

    Caramelized onions are my very favorite pizza topping!

  • I love those cookies! I prefer short HIIT workouts, as I am still not a huge fan of running yet so this is a great way I can get something out of it while building endurance.

  • Look at you wonder woman. While I am googling your flourless cookie recipe, I will say that I too had pizza with my dad this weekend. I feel like that was a theme for everyone, lol. I love red onion on top. And I prefer pesto over red sauce. Goat cheese, now we’re talking.

    Proud of you for really lifting!! You feel so great afterward and you keep burning those calories. If I have a day where I am running late, tough workouts are the way to go. It also depend on my mood, this past weekend I did hill training, which I typically hate.

    I love workouts that give you the most BFYB. That’s why I’ve started trying out Jillian’s 30 day shred. I’m not a big workout fan (but I’m working on it). Jillian kicked my butt two days in a row last week and I could really feel it in my arms- wahoo! :)

    I enjoy high-intensity exercise more, definitely. I love a good sweat sesh! And on pizza…mushrooms and pepperoni :) That was an easy one ;)

  • When i first glanced at that picture of the cookie, i thought it was a chicken nugget!! they look rather scrumptious! and oh my gosh that pizza looks….so…DIFFERENT, yet absolutely gorgeous!!

    when it comes to exercise, i just do what i feel like. i don’t really have a preference. usually i don’t do any exercise at all!! haha! my favourite pizza topping would probably hve to be ham and pineapple..or spicy chicken! yum! sometimes a plain cheese pizza is the only thing for it though! xx
