Lunch today was….well, I don’t think there are words to describe it.

Sweet Potato in a Jar. I kid you not when I say that this was one of the most delicious things I’ve ever eaten!

I’ve been wanting a sweet potato mash for days, ever since seeing this recipe on Christie’s blog. But then when I noticed a nearly empty jar of macadamia butter…I knew it was destiny.

I’m pretty sure I’ve seen this concoction before on other blogs…? So to whoever “invented” (was it you, miss Katie?) SPIAJ - I love you.

mashed sweet potato with almond milk and cinnamon almonds

My mash included one medium sweet potato (peeled and microwaved for 5 minutes), 1/4 cup almond milk, 1 tbsp maple syrup, tons of cinnamon, and crushed cinnamon-brown-sugar almonds.

    Way to rock out the sweet potatoes, lady!

    I am a horrible procrastinator. I mean horrible and I hate being caught up in the cycle of it. For me, it causes major un-needed stress when I realize I have put something off for too long. But, I am a big believer in to do lists, I surely feel more productive when I have one. Good luck, each moment is a fresh start!

    Omg, the SPIAJ sounds AMAZING!!!! Gah. I wish you could buy just an almost empty jar of nut butter haha!
    The seafood looks amazing as well! And the cake.. no words there.

    I’ve never tried anything in a jar, but it seems as though I’m the only one holding out…I think I may have to lose my IAJ virginity soon so that I can experience the amazingness everyone is talking about. :)

    Dinner looks YUM! And I completely commiserate with you on the procrastination problem…Blogging definitely doesn’t help! (but it’s so much more fun).

    Ok now SPIAJ is something I can get excited about!! Now I need to eat my nut butters at turbo speed to make this happen. And I haate when I feel lacking in productivity… a quick fix for me is to work out or clean. Today I finally organized all my stuff from college and felt quite accomplished!

    I have an almost finished jar of AB and a whole bunch of sweet taters I just bought today. SO EXCITED to finally try this combo!!! And black and white cake- you’ve had some delicious eats today girl!!

    I tend to start putting things off too. As soon as I’m done with my last paper, my plan is to sit down and make a big todo list for the summer- I can’t let it slip away again!! Hope you have an amazing weekend love!!

    mashed sweet potatoes with cinnamon is my absolute favorite. one time i blended the sweet potato with some tofu to create my mashed sweet potatoes.. and that was pretty bomb! just saying & suggesting you try it out sometime.

    that piece of cake looks oh my gosh so good - i am with you and your friend.. there is SO always rooms in the dessert chamber.

    I think you followed your 10 ways to eat at a restaurant… and I think it’s a proven fact there is always room in the dessert chamber :) I have been trying to work on slowing down while eating. Sometimes I just get so excited about it I eat WAYYY to quickly. I have to say I haven’t tried anything in a jar either. Oh by the way, that was spiralized zucchini in that picture. It’s only 20 dollars on amazon, def worth it!

    WOW! That SPAJ looks ahhh-mazing! I have 2 sweet potatoes sitting on my counter and I know exactly what they will be used for shortly. Please don’t feel bad about your productivity level this week. We all have weeks where we get either a lot or a little done. It wasn’t a waste of a week because you got to live your life and you can use today and this coming week to tackle your to-do list. Everyday we get a little wiser and learn more about what works for us. Keep up the good work!
