pizza = love

Where did the day go? It feels like I sat down to eat lunch 2 seconds ago and now it’s almost 7pm. I’m not complaining, though; it just means I’m that much closer to watching Desperate Housewives ;)

This afternoon I stuck to my word about being a complete bum. Clearly I have to take it all in before the work-week begins! I also snacked on some cocoa roasted almonds.

I think I have a newfound obsession with marshmallows. I wonder what I could do with them besides making S’mores….?

Around 5:30 I started prepping for tonight’s pizza, which I’ve been anticipating all day. With meal and recipe ideas floating through my head all day, I’d say I’m well on my way to officially becoming a foodie…

I started by making the dough, using a (quite simple) recipe from my Aunt Wendy. She is the baking queen, so I was pretty sure that this would be a sure-fire recipe.

No-Fail Pizza Dough

Ingredients:

  • 3 cups flour (I used whole wheat)
  • 1 tbsp. sugar
  • 1 tbsp. yeast
  • 1/2 - 3/4 tsp. salt
  • 1 cup tepid water

Per Aunt Wendy: Put all dry ingredients in food processor and mix. Add the water slowly and continue processing (2 minutes) until the dough forms a ball. Let dough rest (sit in a bowl) for about 15 minutes to rise a little. Punch it down and roll it out - keep stretching it.

Thanks, Wend! I actually opted for splitting this batch in half, and it was still plenty’o dough.

While the dough was sitting I started working on the star of the show: eggplant. I seasoned it with kosher salt and black pepper and then roasted at 400 for 15 minutes. I didn’t want to cook it completely since it’d be going back in the oven.


Next I did a quick sautee on some shallots and garlic. Once again - didn’t fully cook them.


Finally I mixed 2 tbsp of pesto with 1/2 cup of ricotta. I added the pesto slowly, and this seemed to be the best ratio.


Time to assemble!

1. brush some olive oil on dough
2. spread pesto/ricotta mixture


3. eggplant and shallots


4. top with 1/2 cup shredded mozzarella

5. bake at 400 degrees for 20 minutes

You know what I’m going to say, don’t you? TO DIE. Pizza experiment numero uno = success! I especially loved the whole wheat crust. It was hearty and filling.

I started with two slices, and then went back for a very necessary third.

I have a feeling I’m going to be on a pizza-making-frenzy for a while. Ever heard of dessert pizza? Yeah, I said it.

Plans for tonight: continue my laziness/excess television viewing, spend time with Mommy, pack lunch for tomorrow.
