Planning vacation(s) is definitely the best mood booster ever. I am so so SO excited! I’ve been needing a nice, relaxing vacation for a while now. And now I have two to look forward to

Today has been another fly-by day. Even though I was still completely stuffed from my ginormous lunch, I snacked on some roasted eggplant and steamed cabbage topped with hummus.

I just can’t resist cooked veggies. There could be worse problems, I’m sure. That snack totally ruined my appetite for dinner, so I opted for a “dessert dinner,” which was inspired by my lunch today.
I present you with: dessert sushi.

Okay, so this doesn’t necessarily have to be a dessert. It would be perfectly suitable for a breakfast or a snack as well….or dinner, in my case. Whatever you decide, please give this a try. It is so delicious and fun to eat. And it’s perfect for those of you who don’t like real sushi (*ahem* weirdos! kidding
). And it was super easy. First I spread two spoonfuls of almond butter on a Flatout Wrap (any wrap or tortilla would probably work). Then I topped with some mashed banana and dark chocolate chips.

Roll it up, like so:

And cut into little “maki” sushi pieces.



PERFECTION. Not the most traditional dinner, but I’d rock this every day of the week, easily.

Ahh this so reminds me of one of my favorite desserts!! Heat up a tortilla with some melty peanut butter, “warmed” pear slices, goooooey carob chips and cinn on the stove!! You could totally sub chocoloate chips for the carob too….or eat it cold and “sushi”-like

I will so be trying this dessert sushi. I love bananas (thank goodness, cause it’s about the only fruit I like) and chocolate chips. But I’ve never tried almond butter. I’m such a newbe to this stuff. Anyway, it looks delicious!

yep - dark chocolate. I’m surprised you can’t find them….I just get them at the regular grocery store! Check the baking aisle!
