Pumpkin Spice Cupcakes

Yesterday afternoon I got what I’m now going to refer to as the Sunday baking itch. I wanted to keep it simple, but the result looked and tasted anything but.


Usually I have this weird thing where I only like to eat pumpkin-y things during the Fall/holiday season (yeah, I’m weird like that), but believe me when I say that there is always room for Pumpkin Spice Cupcakes with cream cheese icing. And really believe me when I say that this is the easiest recipe ever!

cupcake ingredients:

  • 1 box of spice cake mix
  • 1 can of pumpkin (NOT pumpkin pie filling)

icing ingredients:

  • 1/4 cup butter
  • 8 oz cream cheese
  • 1 3/4 cup powdered sugar
  • 1 tsp vanilla extract

To make the cupcakes, combine the cake mix and pumpkin - and that’s it! I got this idea from one of Hungry Girl’s chocolate cupcake recipes and figured it’d be just as good (if not better) with spice cake mix. The pumpkin replaces the oil, eggs, etc. that the box directions calls for, which not only makes the cupcakes healthier, but in my opinion it makes them even more moist and flavorful.

Follow the baking directions on the box, which in my case was 18-23 minutes at 325 degrees. My batch was perfectly done at 18 minutes, so be sure not to overcook them.

To make the icing - start by combining the softened butter and cream cheese with a mixer. Then add the sugar and vanilla and beat until smooth.

I thought about using some healthier replacements in the icing, but let’s be honest: you can’t mess with cream cheese icing. And I’m so glad I didn’t.

I also thought about adding raisins or dark chocolate chips to the cupcakes, but there’s just something so perfect about the simplicity of cake + icing, don’t you think?

Hello, my little tan-free beauties! :D It’s now week two of National Skin Cancer Awareness Month. I’ve got quite a loaded post for today’s Tan-Free Tuesday, including two readers’ stories, so let’s get started!

Melanie’s Story

I recently just canceled my tanning membership for various reasons. I’ve been tanning since the age of 19. I’m a Hispanic American and as you may obviously know, many Hispanic people are naturally tanned. I was an exception and am pale as a ghost…or I was. My entire family has the “natural” glow so I was always made fun of for being “white” by my family, my friends, and just random people. I felt the need to keep up or try to live up to them. I wanted to fit in because being “white” was not cool. After I started tanning, some of my family members would tell me that they didn’t like my tanned skin and that they loved my “porcelain” skin. WHAT?! You call me names and then say you miss my “white” skin??? I’m 22 years old now and I’ve quit tanning FOR GOOD. Why? Because I don’t feel the need to live up to my family and friends. My health is far more important than to please them. I quit because I don’t want that risk of getting skin cancer (I KNOW IT CAN HAPPEN TO ME OR TO YOU…SCARY), I don’t want to wrinkle/age faster than what I should, and I never really know if those tanning beds are really clean. Not only that, I have freckles and when I tan they come out even more… I just want people to know that there REALLY are light skinned Hispanics and I’m one of them. I’ve learned to embrace my skin now because it’s beautiful and clean and taken care of. Now, I’m the “white” family member or friend and I’m totally okay with it.

Michelle’s Story

I started tanning when I was 17 and worked at a hair salon that had a bed and a hex (stand-up tanning booth). I first went for my senior homecoming dance because all the other girls were and it was free since I worked there. I’ve always been freckled and very pale, and even though I didn’t get very dark from the tanning it gave me a burst of color that made me much more confident. I got so many compliments and felt so much cuter that somehow a few months turned into 9 years.

My first year of college I got a job at a tanning salon and went to tanning seminars and learned a lot about different lotions and different products to better enhance tanning. I never even thought about my skin being damaged really I wasn’t worried about it. But in the back of my mind the fact that I couldn’t be honest about my tanning to my mom or my little sisters that looked up to me I knew it wasn’t a good choice. Yet that still didn’t stop me. Even as a very poor college student I still continued paying a monthly fee to keep up my tan.

Then last year I got a random text message from my mom saying “do you still tan” and the fact that it was just an something that was never talked about it really startled me. She then sent me an article on new facts about tanning and skin cancer and how it was just as bad as smoking for your health. For some reason that one article helped me to completely stop I went that day and canceled my package. I haven’t tanned in over a year. Several times in the last year I’ve thought about going again and honestly its been hard. But my skin is much more soft and healthy and I’m actually starting to like my true skin color. I know that my future self will always thank me for quitting when I did.

Reader Tips: Self Tanning

Some of you left comments with great self-tanning tips last week, so I wanted to take the opportunity to share them!

  • Tracey @ I’m Not Super Human - I pick Jergen’s Natural Glow, since it builds over time. Here’s a tip, though: If you’re fair-skinned, stick with medium. The pigments in it are better so you don’t turn orange. It’s much more natural than the light version.

  • Alison - I used to use Coppertone Endless Summer self-tanner and loved it. However, it’s super hard to find nowadays! I haven’t used self-tanner at all this year and am learning to embrace my pale skin. It’s easier said than done!

  • Lily @ Lily’s Health Pad - I am naturally fair skinned and freckly. I used to apply self tanner all the time. But A couple years ago, I gave it up. I’ve come to appreciate my natural color, and I don’t mind rocking the white- even in the summer!
  • Nicole @ Making Good Choices - I love Jergens for everyday use..I usually just use that on my arms though and it leaves a nice amount of color all year round (I like to think anyways!)

I’ve been wanting a sweet potato mash for days, ever since seeing this recipe on Christie’s blog. But then when I noticed a nearly empty jar of macadamia butter…I knew it was destiny.

My mash included one medium sweet potato (peeled and microwaved for 5 minutes), 1/4 cup almond milk, 1 tbsp maple syrup, tons of cinnamon, and crushed cinnamon-brown-sugar almonds.

Christie’s struggle with Melasma

Hey GMH followers! This is Christie from ‘Roller Koester Run’. Don’t you just love Gracie’s blog?! When I heard that her and Quinn from Daily Moderation were paying homage to May being National Skin Cancer Awareness Month I knew I wanted to help out by sharing my tanning related story, so here goes.

I grew up the typical teenager. I loved being out in the sun and trying to get as dark a tan as possible. Being Italian, my skin has a naturally olive tone than tans quite easily and never burns. i always used this as an excuse to not use sunscreen. Shoot, pass the oil or any other darkening complex! I also played sports all summer, so was constantly in the sun. And don’t go thinking that, as a Michigan girl, I got pale in the winter. Shoot, bring on the tanning salon!

Things began to change for me about 2 years ago when I began developing Melasma. Melasma is a darkening of skin pigmentation that is mostly caused by the sun (some researchers suggests that oral contraceptives or patches, aka- birth control, may cause this as well). Now this wasn’t the darkening that you look for in a tan. They are irregular patches on your face, commonly found on the upper cheek, nose, lips, upper lip, and forehead.

For me, it’s my upper lip and both cheeks. Awesome right? NO, not at all actually. No girl wants darkening on her upper lip!

The worst part? There is no 100% cure! I have been getting treatments every few months for the past 2 years or so and they are not cheap. The treatment I get is called Fractional Laser Resurfacing. It brings the darkened pigment to the surface and then it sloughs off as dead skin cells do.

The procedure itself stings, but only takes a few minutes. Immediately after it feels like a bad sunburn for about an hour or 2. The treatments have definitely helped me, but the darkness does come back after a few months and especially if I slack on the sunscreen. I just wish I had know, I definitely would’ve avoided the tanning salons and at least used something with a small amount of SPF in it.

Another bummer is that you can’t get treatment for this while pregnant. If you follow my blog, Roller Koester Run, you know that I am about 3 months pregnant now! Pregnancy can actually make this worse, as some women get it just during pregnancy due to the influx of hormones. I am at the point now where I would get another treatment, but can’t. The hard part is that every girl wants to feel beautiful and it is hard to with dark patches on your face.

So, to wrap it up, it’s like those girls on ’16 & Pregnant’, or people who gets STDs. They say things like, “It won’t happen to me”, but it can! It can happen to anyone. Just think, this isn’t even the worst of it, I am not even delving into the topic of skin cancer! So protect yourselves ladies. Stop going to the tanning salons and go to CVS and buy some tinted lotions already!

Coconut Macadamia Cookies.

SO. Today I ventured into the world of creating my own recipe. It wasn’t a total disaster, but it could’ve gone better. As I write this I’m still on the fence as to whether or not I should even post the recipe…

While I was sitting in church today I got the baking itch for some reason. Tina’s recent batch of Coconut Carrot Cake Muffins came to mind, along with a ton of great ingredients I have in the house (including my new collection NuNaturals products), and then I thought….COOKIES. Totally normal to be thinking about in church, right? So as soon as I got home I whipped out all of the ingredients to make Coconut Macadamia Cookies. These turned out to be not only delicious, but also low carb and gluten-free.

So, what’s the problem, you ask? They’re quite crumbly. I mean, they’re definitely still eat-able, but I’m just such a perfectionist that this minor detail irks me. I remember Tina saying that her muffins turned out the same way - it must have something to do with the coconut flour.

I’m just going to go ahead and post this recipe, but please know that it’s under construction. In fact, if any of you bakers out there know how I can decrease the crumble-factor of these cookies, PLEASE let me know! Let’s make this a joint effort, shall we? :)

Coconut Macadamia Cookies (yields 15 cookies)

Dry Ingredients

  • 3/4 cup coconut flour
  • 1/2 cup almond flour
  • 1/4 cup NuNaturals Stevia Baking Blend
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/8 tsp salt

Wet Ingredients

  • 1 egg
  • 45g (just under 3 tbsp) macadamia butter
  • 1/2 cup coconut OR almond milk
  • 1/2 tbsp pure vanilla extract

Mix-Ins

  • 2 oz macadamia nuts
  • 1/4 cup + 2 tbsp unsweetened coconut flakes

1. Preheat oven to 350.
2. Combine dry ingredients, breaking up the lumps as much as possible (this can be kind of tough if your almond flour was refrigerated).

3. Whisk together wet ingredients.


4. Chop the macadamia nuts by placing them in a zip-lock and pounding them (if you don’t have a pounder, a can or jar will do the job). Don’t chop them too finely - just until the nuts are about 1/4 in size.


5. Combine wet and dry ingredients. The batter will be pretty thick.

6. Add the macadamia nuts and coconut flakes and combine.


7. Make golf-ball-sized balls of dough and place on greased cookie sheets. Tip: I used a melon scooper to shape and release the dough easily.

8. Bake for 10-12 minutes - until cookies just begin to get golden brown on top.
9. GENTLY move to the cooling rack. The cookies are most delicate right out of the oven and seem to firm up after cooling for a bit (**refrigerating them after fully cooled helps them get even more firm).

10. DIG IN! The crumble factor makes them especially good to top yogurt or oatmeal with, just sayin’ ;)

Okay, so these might not be the most beautiful cookies, but I’ve learned to appreciate them for their individuality. Here we have a Micky-Mouse wannabe:

There’s something about Sunday mornings that makes me want to hop right into the kitchen and start baking. Completely normal…right…?

On the menu for today: Apple Raisin Flax Muffins.

Apple Raisin Flax Muffins

I found the original recipe on Spark Recipes, but tweaked it a bit. The ingredients are:

  • 1 cup ground flaxseed
  • 1 cup whole wheat flour
  • 1 cup oat bran
  • 1 cup brown sugar, packed
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp cinnamon
  • 2 apples, chopped
  • 1/4 cup raisins
  • 3/4 cup almond milk
  • 1/2 cup egg whites
  • 1 tsp. vanilla

Mix together dry ingredients, apple, and raisins. Separately mix milk, brown sugar, egg whites, and vanilla, then pour into dry mixture. Mix all together and fill cupcake papers (which I also sprayed with nonstick spray). Bake at 350 for 20-25 minutes (mine were done at 22 mins). Makes 18-20 regular sized muffins.

This batch turned out absolutely bomb. Clearly it was breakfast material.

Roasted Eggplant and White Bean Dip

Last night I roasted a whole eggplant:

I planned on packing it as some sort of casserole to bring to work today, but I ended up working from home, which meant I could do I bit of experimenting. The result? Roasted Eggplant and White Bean Dip:

Ingredients:

  • 1 whole eggplant, cubed and baked at 375 for 25 minutes
  • 1/4 cup white beans
  • 1/2 tbsp olive oil
  • 1 Laughing Cow cheese wedge
  • 1 tsp dijon mustard
  • salt and pepper

Begin by adding the eggplant, beans, salt and pepper into the food proccessor and blend for 20 seconds.

Then add the olive oil and dijon mustard, and blend for another 20-30 seconds. Finally add the Laughing Cow cheese wedge and blend until it’s combined.

I like my dip a tad on the chunky side, but you could always let it smooth out in the food processor some more.

This dip is to. die. I literally could have eaten it straight out of the bowl! I’d say it makes 3-4 servings….or *ahem* 1 serving in my case :P

I ate it with sliced red bell peppers and “homemade” tortilla chips:

To make the chips, cut one La Tortilla Factory wrap (or any wrap of your choice) into triangles. Sprinkle on some kosher salt and garlic powder, and toast in the toaster oven until crispy. These make the perfect accompaniment for the dip!

This meal was so incredibly delicious and filling. I must say that I’m pretty darn satisfied with my eats so far today. I don’t know why I don’t experiment with food/recipes more because 9 times out of 10 I’m happy with the results!

AMIGAS!!!!! I don’t even know where to begin. Wow. Even though I was only in Mexico for a week, I’m having a seriously hard time re-entering the real world. Taking the week off from blogging was so. weird. It was nice to have a break from all forms of technology, but I wish I would’ve been able to keep you all up to date with what I was doing. And when I say I was broken off from all forms of technology, I mean it. Liz and I didn’t even know the time at any point in the day :P But that’s what vacation should be, right?!

Before I give the deets on my vacation, let me begin by saying that I literally had the best week of my life. We relaxed. We ate. We met so many people. We danced our butts of. And I couldn’t have asked for a better person to spend it with!

The resort itself was out of this world. I knew that we were going to a nice resort, but it was way beyond my expectations. We stayed at the Riu Palace Mexico in Riviera Maya (Playacar), and it was gorgeous:

The beach was so incredibly beautiful. Sometimes resorts have little rinky-dink beaches, but this was the real deal:

We spent pretty much the entire day on the beach. Despite my efforts to avoid sunburn (I went through TWO bottles of sunscreen), I seem to have missed a spot :P

One of the things that Liz and I were worried about is that our resort is kind of known for being mostly older people.That did turn out to be true, but it didn’t matter because we had access to 4 (maybe 5?) other Riu resorts, which had tons of younger people. Not to mention we all shared the same beach. We made a lot of friends and had some good times :) But the most fun we had was definitely found in Playa Del Carmen:

We went to a few different bars/clubs, and they were all insanely fun. The Blue Parrot was a good one; it was right on the beach, and they had crazy cool fire shows:

The entertainment in Mexico (in town and at our resort) was all around superb:

But the highlight of our entire trip was probably Coco Bongo:

Coco Bongo is basically a huge show/disco/club with performances (mostly celebrity impersonations) and a ton of audience interaction. I’d compare it to a modern day version of Moulin Rouge. We heard from a lot of people at the resort that it was a must-see, so we went on Thursday night. The resort actually set us up with tickets and a table inside so we didn’t have to wait in line. We didn’t know exactly what to expect, but what we got was literally thee most fun night of our lives. We met up with some of our friends from the resort, and the night was filled with laughing and dancing.

Other trip highlights were a day at the spa (no photos of that, woops!) and our snorkeling excursion! That was an all-day event, and we went to three different snorkeling spots. The first was an underground cave:

I thought snorkeling in a cave would be scary, but it wasn’t at all! Instead, it was beautiful and one of the most exciting things I’ve ever experienced.

We also snorkeled out to a coral reef, but I wasn’t allowed to take to my camera to that spot :/ We went pretty far out into a lagoon and saw tons of tropical fish and a 5-6 foot baracuda. Not gonna lie - I could’ve done without seeing that =)

The last spot was another lagoon, which was basically like a big open cave:

There was a small cliff jump (which we didn’t do) and a zip line:

Oh, and did I forget to mention that all of the food was to die?! I managed to practice “moderation” for the first few days, but that kind of fell by the wayside towards the second half of the week :P I just couldn’t resist all of the delicious eats! There were 4 dinner restaurants, 2 lunch restaurants, and a buffet that was pretty much in a league of it’s own. Liz and I pretty much owned that joint. Here are just a few of my filled-to-the-brim plates:

We only ate at two of the restaurants: Miyagi (Japanese) and Krystal (fushion cuisine). This wasn’t your typical hotel restaurant food…it was legit fine dining. Miyagi was probably my favorite. Liz and I shared pretty much all of the following:

dessert: a passion fruit...tart? It was so-so.

We ended our eating fest with a bang on our last night when we ordered room service at 4am. I’m just the picture of health right now, aren’t I? :P

Okay, maybe we didn’t finish all of that food. But it was free….can you really blame us?

I can officially say I feel stuffed just looking at all of the food I consumed over the past week! I don’t think I would’ve had it any other way =) But I will say that I’m definitely looking forward to getting back to my healthy eating schedule.

…But getting back to my normal work/life schedule? Not so much :/ I feel like I was in a dream world for a week and now I need to snap back into reality. I’m sure I’ll be re-adjusted in a few days or so.

10 No-Stress Ways To De-Stress.

I know that many people find exercise to be the best way for them to de-stress. With the exception of doing yoga, I’m generally not one of those people. When I’m exhausted from a long day, the last thing I want to do is throw on my running shoes and pound out a sweat session. So I’ve tried to find easy, no effort was to de-stress during the day, and I thought I’d share them with all of you :)

1. Hot tea.

Whether you’re at work or just got home from a busy day, sipping a mug of hot tea is a great way to calm yourself down. I’ve seen “tension tamer” teas and the like, but I find that regular tea or green tea does the trick as well.

2. Light a candle.

Better yet, light two or three! Candles to me signal relaxation, and just being around them helps me to feel more settled.

3. Intentionally clear your mind.

If you’re anything like me, you have a million and one things running through your head at once. Take a minute or two to just forget about everything, and focus on having a clear mind. It takes some effort at first, but it gives a great sense of release - even if just for a few moments.

4. Rub your temples.

I find that gently rubbing my temples for 30-60 seconds instantly relaxes and calms me. It releases tension and re-sets my focus. Not to mention it feels great!

5. Switch up your routine.

Sometimes I purposefully exercise in the evening rather than the morning, or eat breakfast for dinner. Simply doing things different helps me to live in the moment. Viewing each day as completely separate from the rest helps me to enjoy every moment rather than just mindlessly going through a daily routine.

6. Feed your emotions.

Yeah, I said it! Most people consider this to be a big no-no, but I disagree. I’m not saying to down a sleeve (or two) of Oreos. Instead, make yourself some healthy comfort food. For example, if you get home from a long, stressful day and are cravings carbs, make yourself a huge bowl of loaded oatmeal. Instead of anxiously raiding the fridge, try to find healthy alternatives to dishes that you know will make you feel satisfied and less anxious.

7. Dim the lights.

You may or may not have been sitting under fluorescent lights all day, so give yourself a break and dim the lights for a while. You’re body will naturally want to relax.

8. UNPLUG.

This is definitely the most important tool for me. I work on a computer pretty much all day long with my job and blogging. And when I’m not on the computer, I’m on my BlackBerry or watching television. TURN IT ALL OFF! Even if it’s just for 15 minutes. You’ll be surprised how much your mind will slow down.

9. Put a warm cloth on your forehead.

Take a washcloth soaked in hot water and lay it on your head for a few minutes. You may feel goofy, but it will relieve tension and help you leave behind the stress that accumulated throughout the day.

10. Plan a vacation.

Yeah yeah, easier said than done! But even if you commit to putting away $20 a month towards a vacation, just knowing that you have something to look forward to will put you in a better mood. When something stressful comes up, remember that you have a relaxing, stress-free vacation coming up in the future.
