naughty and nice.

Baking first thing in the morning is one of the best habits I’ve formed over the years. But with the holiday season in full swing and indulgences around every corner, starting the day off with cookies for breakfast isn’t always the best idea.

Who am I kidding? Of course it’s the best idea.

To lighten the blow just a bit, I made a healthier cookie – both in contents and size.

Those are Julie’s Giant Oatmeal Cookies, which I’ve made once before. This time I halved the recipe, and made the following substitutions:

  • spelt flour instead of all-purpose
  • canned pumpkin instead of applesauce
  • added an extra 1/4 cup of oats

But the cookie bonanza didn’t stop there. I also whipped together a batch of classic chocolate chip cookies. Er…make that Classic Christmas-colored M&M Cookies. You know, since I’m trying to get into the Christmas spirit and all.

I used Hershey’s Classic Chocolate Chip Cookie recipe, but once again halved it. And clearly I subbed out the chocolate chips for M&Ms.

Though both delicious, I’d be lying if I said that the “naughty” cookies did not reign supreme in the taste-department. BUT! The “nice” cookies are still quite tasty as well, and they even make for a great healthy snack. There are no losers here!
