After a pretty intense workout at the gym last night, I was ready for a filling but quick dinner. It wasn’t difficult deciding on one of my favorite go-to foods…eggs!

Not only do I love the taste and convenience of eggs, but they also have a ton of health benefits. Once deemed a “bad” food because of its cholesterol content, the egg is now recognized as the gold standard for protein. One whole egg has 75 calories, 7 grams of high-quality protein, and 5 grams of fat, along with iron, vitamins, minerals, and carotenoids (source).
Some other benefits:
- Eggs are a widely available and inexpensive source of complete protein.
- Eggs are one of the best sources of choline – an essential nutrient (which many people are deficient in) that plays a role in brain health and reduces inflammation (source).
- Eggs can aid in weight loss. Studies have shown that people who eat eggs for breakfast rather than the calorie-equivalent in bagels lost twice as much weight and had a greater increase in energy (source).
- The carotenoids found in egg yolks help to protect eyesight.
I also love the versatility of eggs. You can throw just about any vegetable or legume into an egg scramble for a quick and delicious meal!
For last night’s dinner, I scrambled two eggs with a big handful of spinach and topped with gorgonzola cheese.

I also had sweet potato home fries (1/2 sweet potato + 1/4 cup onion + 1 clove garlic) and a piece of Manna bread.

Needless to say, this meal left me perfectly stuffed.
Gotta run…I’m off to my first ever Core Fusion class!

I eat eggs all the time. I’m not ashamed to say eggs are my staple hangover food. I went through a period where I would not eat the yolk because my cholesterol was extremely high. It made me really upset because I eat so healthy most of the time but there is nothing I can do about GENETICS
Know what would have made those sweet potatoes even better?! Bacon grease! Try it.
I do love that I can whip up some eggs for the husband if I either fail at making dinner or don’t properly plan! I am soooo going to try those sweet potato home fries because they look delish!!!
I love eggs. My favorite way is with spinach, tomato, and feta. And a hefty dose of green pepper sauce.
Eggs are my dinner standby - I eat them at least 2 times a week. They are so delicious and versatile…good call on the gorgonzola…yum! Have fun at Core Fusion…it’s a great workout!
I don’t eat eggs as much when pregnant, but I always love them for a versatile and quick meal.
I’m a big fan of eggs - usually I’ll have them at other meals than breakfast! I’m a big fan of poached eggs if I’m having them for breakfast - & omelettes at other meals.
I freaking adore eggs - I eat them all the time! We just got a couple dozen from a friend’s farm and I’ve been hard-boiling them for snacks.
I eat egg whites every.single.day for breakfast. Once in a while I throw in the yolk and after competition I’ll be eating the yolks more frequently (can’t wait!) I love scrambled eggs which is how they turn out even when I’m not trying to make scrambled HAHA!

I’ve been eating eggs quite regularly recently. My favorite way to eat them, that I’ve just stumbled upon, is scrambled, mixed with lite pork sausage and diced potatoes with some cheese, wrapped in a flour tortilla and smothered in green chili. YUM-O!!!
I adore eggs! I like the greek style with spinach, onion, tomato & feta… mmm! But I’ll eat them any way!
I love eggs. So filling. I love how you post the benefits as well. I also do that on my blog for some foods. I recently did one on pumpkin! I think just knowing the health benefits, like what it does for your skin and energy, is such motivation to continually eat healthy! =)

I love eggs..my favourite way to eat them is over easy (aka dippy eggs:) ) on toast. I love soaking upthe yolk with some toast.
I LOVE eggs! Scrambled and hard boiled are my favorite ways to cook them.
Eggs are one of my favorite foods! Another benefit is that they are a very INEXPENSIVE form of quality protein! I love them any time of day!

ive been eating an egg for breakfast pretty much every day since for the last 6 years ever since i discovered my morning ‘souffle’. 1 egg + 1 tbs pb or almond butter + banana/pumpkin/whatever + chia/flax - microwaved for 2 min = heaven.

My usual is pop 3 of them into the microwave at work, and make myself an egg sandwich. I also like having sweet eggs, with a little bit of honey. Hard-boiled quick easy snack. The one thing I haven’t tried is eggs in oatmeal. For some reason it seems a little weird to me.
Where did you do Core Fusion?? What did you think? I love it. So much. Words can’t describe.
Also I love eggs, but definitely would never say eggcelent. They are one of my favorite go to foods. I used to eat them dippy style but now I’m more of an omelet girl. There are so many different things you can do with an omelet.
Can I ask your opinion on “cage-free” versus regular eggs? Do you see any benefits and does the research suggest that there are benefits?

I don’t eat eggs TOO often, but I definitely don’t avoid them! They’re just not usually what I crave. I love having eggs in quiches, especially with roasted red pepper, spinach and goat cheese.

Your meal looks so good.. especially those sweet potato bites! I haven’t been eating eggs as much as I used to, but I really do love them!!
One of my favorite strange yet delicious combinations is scrambled eggs mixed with sunflower nut butter. I don’t cook it in, too sticky and messy, but cook the eggs and then stir in the nut butter afterwards. I usually use about 2 teaspoons of nut butter per egg.

I love eggs! I eat them a lot. They are my standard quick breakfast food. I will eat them scrambled with a little cheese and I usually have a side of bacon. Mmm . . . tasty. I do agree that eggs get a bad rap. I have no problem with them though.
I love eggs you can whip them up in seconds. I like mine as an omelette or used as a wrap with a super tasty filling!

It was a combination of yoga and pilates, which I thought I’d love, but it was much more relaxed than I anticipated. I thought it was going to be more along the lines of power yoga! Oh well

I took the *supposed* core fusion class at my local gym. I’m almost positive it wasn’t the Core Fusion we’re familiar with. It was a mix of yoga and pilates, which sounds great, but I wasn’t impressed. It was very low-intensity - mostly stretching. Oh well!
