Girl Meets Health

I refuse to say eggcellent.

After a pretty intense workout at the gym last night, I was ready for a filling but quick dinner. It wasn’t difficult deciding on one of my favorite go-to foods…eggs!

Not only do I love the taste and convenience of eggs, but they also have a ton of health benefits. Once deemed a “bad” food because of its cholesterol content, the egg is now recognized as the gold standard for protein. One whole egg has 75 calories, 7 grams of high-quality protein, and 5 grams of fat, along with iron, vitamins, minerals, and carotenoids (source).

Some other benefits:

  1. Eggs are a widely available and inexpensive source of complete protein.
  2. Eggs are one of the best sources of choline – an essential nutrient (which many people are deficient in) that plays a role in brain health and reduces inflammation (source).
  3. Eggs can aid in weight loss. Studies have shown that people who eat eggs for breakfast rather than the calorie-equivalent in bagels lost twice as much weight and had a greater increase in energy (source).
  4. The carotenoids found in egg yolks help to protect eyesight.

I also love the versatility of eggs. You can throw just about any vegetable or legume into an egg scramble for a quick and delicious meal!

For last night’s dinner, I scrambled two eggs with a big handful of spinach and topped with gorgonzola cheese.

I also had sweet potato home fries (1/2 sweet potato + 1/4 cup onion + 1 clove garlic) and a piece of Manna bread.

Needless to say, this meal left me perfectly stuffed.

Gotta run…I’m off to my first ever Core Fusion class!
