salad for breakfast.

Oh HELLO loves of my life. Today is going to be a great day…I can just tell :) I don’t know about you, but it’s gorgeous outside in my neck of the woods.

Too bad I can’t take a “mental health day,” huh?

I woke up this morning after having some crazy dreams last night. Maybe eating a whole block of fudge before going to bed last night wasn’t such a good idea…? I still managed to squeeze in a pretty decent 25 minutes of Pilates/Yoga to start the day off right.

Generally I prefer something sweet for breakfast (then again, when don’t I prefer something sweet?). But today, it was all about the savory.

Breakfast salad, anyone?

The salad included:

  • about 2 cups baby spinach, steamed
  • 1 egg
  • 2 slices turkey bacon
  • 1/2 avocado, mashed
  • feta cheese
  • black beans

Not only was this delicious and filling, but it felt great to get a couple of servings of veggies in so early in the day. I’ll never entirely deny my sweet treats for breakfast, but sometimes a savory breakfast salad is the way to go.
