cleaning out the fridge.

I must confess that I’m not always the most resourceful person when it comes to food. I wouldn’t go as far as saying that I waste food, but I am notorious for going to the grocery store before it’s entirely necessary. Okay, I admit it. Sometimes I waste food.

But! That certainly wasn’t the case today. In fact, I used up food that was on its last limb for breakfast, lunch, and dinner. For breakfast it was an overly ripe banana and some definitely-more-than-10-days-old almond milk. For lunch, I made use of last-limbed spinach, pepper, onion, and bacon.

Combine all of the above with two egg whites and cheese, and badabing badaboom - you’ve got a delicious and filling lunch.

For snackage I scraped out the remnants of a jar of Cacao Bliss and stuck it in the freezer DCD-style. The result?

I kid you not when I say that this was better than any piece of chocolate candy. Let’s just say my relationship with Cacao Bliss has been taken to a whole new level.

For dinner I made some fresh tuna salad (that, is if you can really call a canned-item fresh) by combining about 4oz tuna, 1 tbsp canola oil mayonnaise, a spoonful of Greek yogurt, salt, pepper, and dried parsley.

Lettuce wraps, anyone? These certainly weren’t on the PF Chang’s level, but they were still quite satisfying…and a great way to use up some on-the-outs romaine.

I rounded out the meal with the last of some sliced red pepper and cucumber.

Not too shabby!

Dessert however, is going to require some more thinking. I mean, there’s always the frost-bitten vanilla ice cream in the freezer. But like I said…I never prided myself in being THAT resourceful.
