Nothing brings me back to my childhood like good old boxed mac’n cheese. Annie’s natural macaroni and cheese was one of my unplanned purchases yesterday, and it’s one that I’m so glad I made.
I added cannellini beans and a few drops of hot sauce for some more oomf. I also had a simple spinach salad.
A simple yet delicious dinner. Sophie thinks so too.
For dessert I made another childlike dish – Mini Cheesecake Pudding Pies. It’s a super simple recipe, which includes these two items:

Hey, I never claimed to eat only all-natural products.
I whisked the Jell-O with 1 3/4 cups of skim milk for 2 minutes, and then I poured the pudding into the mini pie crusts. I placed them all on a baking sheet to refrigerate for about an hour.

Aren’t they adorable?? I love individual desserts!
Top with whipped cream for a decadent and fun treat.

It was a pretty busy work day, so I’m looking forward to unplugging for the night. I think you can guess how I’ll be spending 8-10pm
Have a good night, boos! xoxo G
- What foods bring you back to your childhood?
- In what ways do you recreate them?

Those are so cute! Great idea for mini desserts.
Love the mini desserts! Those would be great for a party or when I have people in town…
PS- I believe I have the same plans as you do from 8-10
Sometimes I crave spaghetti-o’s! Ahhh!
I love mini desserts - those are SO cute
I used to love Spaghetti-Oh’s and the canned mac n’ cheese - I believe Hormel used to make it, so unhealthy but so good
I crave mac and cheese too. It was my FAVORITE meal as a kid. Instead of using the typical noodles and Velveeta of my childhood (I never ate the boxed stuff), I use whole wheat pasta, mild cheddar cheese, and throw in a bunch of steamed veggies (usually some combo of corn/peas/green beans) for good measure.
I love mini sized desserts! Beans & Weenies take me back!
My mom called it gourmet meal # 1 haha.
Haha loved the picture of your cat!! And the little desserts are so cute and a good idea!
Mac & Cheese was definitely my fave kiddo food too! I just did a vegan version with paprika, mustard, and TVP the other day that kicked Kraft’s butt!
Simple AND delicious, indeed! It’s always refreshing to find a food blogger that doesn’t overwhelm me. I love being able to say, “Hey, I want to try that!” and ACTUALLY do it. Those mini cheesecakes are calling my name!
I am not kidding when I say I will definitely be making those pudding cheesecake desserts in the near future. I’m drooling…!!
I love putting bell pepper, peas and spinach into my macaroni and cheese. Thank goodness for Annie’s products
thats a great idea for a mini dessert and also great to serve toa party!! my fav is KEY LIME PIE!!!
I love mini desserts too! I swear, they always taste better than their larger counterparts
We get the Annie’s Mac for M when its on sale. I tried some the other day and it really was liking taking a bite out of childhood.
Hmm…lots of foods remind me of childhood, but Samoas Girl Scout cookies come to mind because my grandfather would always buy me a box. Ah - to be young again!
Mac n’ cheese always brings me back to my childhood. Nothing beats the classic Kraft version, but I also like to buy Annie’s mac n’ cheese and mix it up with some veggies and fake chicken. An “adult” version.
Mac and cheese is definitely up there with my favorite childhood foods. That and spaghetti o’s which I’m not tempted to eat. Ick. Oh, and hamburger helper. I used to love that!
I loved Mac & Cheese and still eat the Annie’s version today. Like most of the comments above, I try to dress it up a bit with corn & broccoli & make sure I have large side salad along with it. So good!!!
Shut up! I am going to totally try that at my next party!! I wonder if you could do the same with a cupcake pan and crumbled graham crackers. That’s awesome!
My favorite cookies were the butter ones in the shape of a flower with the holes in them, you’d dunk them in Kool Aid.
There is just sum’thin about boxed mac n cheese, yummmm. Oh and Campbells tomato soup. FYI: I value how honest you are with your eats. You are one of the people who is secretly assisting me in my journey for balance!
I’ve used those mini pie shells before - so fun! “Egg in a nest” takes me back to my childhood…a piece of bread cooked stove top with a hole cutout for the egg to cook. AND Mickey Mouse shaped pancakes that my grandmother would always make us.
I also like to hollow out a scoop of mashed potatoes and put green peas inside.
Those look so yummy and pretty! Pancakes bring me back to my childhood! I have had pancakes pretty much every sunday since I was little and I still do! The recipe really hasn’t changed at all except now I add some protein powder! I have had lots of pancakes but I can honestly say none of them taste as good as my mom’s!
I have never seen those ready graham crust bowls. I must find them! I just have to tell ya, I’m babysitting my friend’s 3 year old and 1 year old, and when I pulled up your page, the 3 year old saw your picture and saw the blonde hair and asked, is that you Jen Jen? (That’s her name for me) I said no it’s another girl with blonde hair.
I love how cute and easy those mini desserts are! I might have to whip them out at my next party.
I loved grilled cheese as a kid! Nowadays I’ll use brie instead of cheddar and add turkey and apple slices. But sometimes I just want the good old fashioned version too!
