food boredom.

Gosh, I really never thought those words would come out of my mouth…er, fingers. I don’t know why, but lately I’ve been seriously bored with my eats. I mean, food still tastes good, but all of the meal ideas that come to my head have just been bleh. And when I go in the grocery store lately I feel like a lost 3-year-old. Any suggestions? Have you tried any new recipes or foods lately?

This food boredom reared its ugly head this morning when I “made” breakfast. I had a mashed banana topped with macadamia butter, Cacao Bliss, coconut, and cinnamon.

I really don’t know where I was going with this. I mean, it was tasty, but not exactly breakfast-worthy. I should’ve gone a step further and made Ashley’s Banana Scramble!

I also had 1/2 container of Greek yogurt with cinnamon.

Lunch was much, much more satisfying. For some reason I was actually craving protein + saltiness, which is totally unlike me (I have a mouth full of sweet teeth). I was going to go with just an an egg sandwich, until I came across this gem in the fridge:

Unopened brie? Really?! It must’ve been left over from Christmas. Thanks, Santa. I mean, it’s certainly not top-notch brie, but it went darn well with blackberry jam.

As for the craving, I opted for an open-face egg + avocado sandwich.

For snackage I had a tortilla filled with crunchy almond butter. I don’t even know why I use tortillas as a nut butter base when a simple spoon is perfectly capable of getting the job done…

For dinner I had chicken salad with grapes and walnuts atop a bowl of romaine.

To make the chicken salad, I combined:

  • 1 1/2 boneless breasts of cooked chicken, cut into bite-sized pieces
  • 1/4 cup seedless grapes, cut in half
  • 1-2 tbsp (15 grams) walnuts, crushed
  • 1 tbsp canola oil mayonnaise
  • 1-2 tbsp plain Greek yogurt
  • a splash of lemon juice
  • 1/4 tsp kosher salt
  • 1/4 tsp sugar (optional)
  • freshly ground pepper (to taste)

Okay, okay, I wasn’t entirely bored with this. In fact, if you’re bored with plain old grilled chicken, you should definitely give this recipe a try. The creamy dressing, crunchy walnuts, and juicy grapes make for a pretty phenom chicken salad.

Plans for the rest of the night include checking in on work, “girl time” with Momma Meets Health, and watching the premiere of the new Bachelorette. Um, am I the only one who cannot stand Ali? I’m pretty sure that I am. But am I going to watch anyway? Of course.
