Shew…I feel like I’ve been on the road all day long! It’s nice to be home. My mom and I decided it’d be a good idea to go to the grocery store to stock up for this weekend’s snow storm. Watch it turn out to be like, three inches. Oh well, I’m never one to pass up the chance to get more food =)

Before we left I wanted a little snack, not to mention I had a killer sweet tooth. I decided to give my pancake in a bowl a second try. This time around was much more successful, except for the fact that it didn’t turn out to be a pancake! Instead, I was surprised with this delicious little cookie in a bowl:


Kind of reminds me of Tina’s 3-minute breakfast cookie, no? Mine probably doesn’t have as much staying power, though - it’s more of just a sweet treat. It included:

- 1 tbsp butter
- 1/4 cup almond flour
- 1 tbsp egg white
- 1/4 tsp baking powder
- 1 drop stevia extract
- cinnamon

I melted the butter in the microwave for 20 seconds first, and then added the rest of the ingredients. The batter was very thick - I thought about adding water to thin it out, but I wanted to see what the thick batter resulted in. And apparently, it was a cookie! The butter was definitely the key ingredient. It added flavor and made the cookie super moist. Regardless, I topped it with some almond butter after the photos were shot ;) I still think I’m going to mess around with this recipe some more to see what else I can come up with, but I’d definitely whip up this baby again.

I wasn’t super hungry when we got home from errands, even though it was almost 7:30. I decided to make a small spinach + shrimp caesar salad.


With a side of pepperoni and cheese.

Time for some R&R. Vampire Diaries AND Real Housewives of Orange County tonight…will anyone else be watching?
