Today is turning out to be a great day. Not only am I feeling better, but I ran some fun errands and had some tasty eats.
My parents were cooking up a storm all morning. “My” entree of choice was some wild Alaskan salmon that has been in the freezer for about a week. So while I was running errands, it was sitting in the oven getting all sorts of delicious for me to dig into when I got home. Before I left I snacked on 1/2 of an avocado with kosher salt.
First I headed to the health food store to get the ingredients for a recipe that I’ve been dying to make. Unfortunately they didn’t have all of the ingredients, so I got what I could and will order the rest online later. I did manage to grab almond flour, stevia extract, Jay Robb’s protein powder, coconut oil, and tahini.
Oh. my. goodness. Why have I been missing out for so long on tahini?! I love. I snacked on a few spoonfuls while making lunch.
I also stopped at Barnes and Noble because I had two gift cards to use. My choice of purchases is kind of obvious, don’t you think?
I’m starting with Taubes because I’ve been wanting to read this forever. I’m a big believer in the effects of insulin in our bodies, so I’m anxious to learn as much as I can. This book is majorly thick, so given my busy life I’m anticipating it taking at least a few months to get through…
On a side note - a funny thing happened to me at the bookstore (well, I thought it was funny!). When I was checking out the guy at the register said, “In case you’re interested Lauren Conrad from Gossip Girl will be making an appearance here next week.” By his tone you could tell he totally had to say that, but what was even funnier was that he said Gossip Girl! I jokingly corrected him that LC is from The Hills, and we both laughed it off. Guess ya had to be there
ANYway, lunch was salmon + roasted brussels sprouts topped with a hollandaise dill sauce.
I felt so elegant eating this for lunch, haha! It was delish, if you couldn’t tell
I needed something sweet after lunch (what else is new?) so I did a little experimenting to make almond butter ice cream. I pretty much followed along the lines of HEAB’s protein ice cream, minus the protein powder. In the mixer went: 1/2 cup unsweetened vanilla almond milk, 2 tbsp half & half, 1/2 tsp xanthan gum, 2 tbsp almond butter, stevia, and 3 ice cubes. It came out a little soupy, but who doesn’t like ice cream soup?
I might tweak this a bit in the future, but it certainly wasn’t a disappointment.
I’m going to try to start reading Good Calories, Bad Calories now. Hopefully it doesn’t go completely over my head! Ta-ta, loves. xoxo G
What are your favorite things to get from the health food store?





OOoh, that salmon & hollandaise looks good! I don’t think I’ve ever had a hollandaise sauce (i live under a rock, I guess) but I feel like that should definitely change.
And don’t even get me started on my favorite things in the organic/ntural/health section of the food store. I find so many interesting things and they ALL end up in my cart. It’s a serious problem. I love browsing for and experimenting with different flours, cereals, grains, butters, spices, everything! haha.
And P.s. the batter for those muffins was heavenly
I’m not much of a “batter eater” but since I was kinda just throwing spices in and making up the recipe as I went I had to make sure it wasn’t missing anything! lol.

Just as a heads up… as another healthy eater here… Gary Taubes ideas on weight loss are a bit bizarre!! I hope you enjoy it, but please take it with a grain of salt!!

And i’m a nut butter junkie.. in a health food store, I’d go crazy there. But I also go for cereals, granolas, oats, etc.
HEABs ice cream looks yummy topped with almonds!!
I know some people think of them as bizarre, but I actually agree with him to quite an extent! I already know a lot about what he stands for, I just haven’t read the book all the way through myself yet. I’ll definitely do a review post as soon as I finish reading it! (in a few months

I just wanted to let you know what I thought of it and as I am in recovery from an Eating Disorder, I found it a bit of a hinderence to that… but I was glad that I read it. There will be many things that interest you and I cannot wait to read your review of it!!
Oh, I’m sorry to hear that! But I’m glad to hear that you’re in recovery =) Best of luck to you! I can definitely understand why some books might be a hinderence to your recovery. So far to me, “Good Calories, Bad Calories” seems more to uncover the science and history behind nutrients and their effects on the body, as opposed to a “diet” book (which I am not a big supporter of!). But yes - I’ll make sure to post about tidbits of what I’m learning throughout the read, and a final review =)
