Hey babes! Hope you all had a fantastic Sunday. I sure did. It was nice to get out of the house since I’ve been cooped up for the past few days. I threw on my new favorite purchase to celebrate.

Yeah yeah, keep giggling! I am in love them and will continue to wear them with pride ;)

Anyway, this morning my mom and I left early to stop at the grocery store (our favorite hangout, obv). Would you believe they had a whole section of make-up on sale for 99 cents to $3?! And I’m talking good make-up. My mom and I were rummaging through for at least 20 minutes, and we both came away with some great finds. Make-up can be expensive these days, so we definitely got some steals.

On the way to church I stopped at Starbucks for a tall coffee with heavy cream. Once again I forgot to snap a photo - I guess I just get too excited when I get coffee these days :?

Church was really great today - definitely a message I needed to hear. Afterward I went out to brunch with the whole fam. I got an egg white cheesesteak omelet with provolone cheese.


How could this not be delicious? I ate the entire thing.

Afterward I took Liz home, and Kath came over for a bit so we could discuss our vacation plans. We’re definitely cutting it close time-wise, but this vacation is GOING to happen. I’ll give details later when there are actually details to give :)

I was already kind of hungry when I got home a few hours later, so I threw together some turkey + cheese roll-ups and 1/2 of a green monster.


Dinner came a few hours later, which was a craving I simply couldn’t deny: pancakes! Almond flour pancakes, to be exact….smothered in almond butter. I don’t think it gets much better than that, do you?


I followed along the lines of HEAB’s almond flour pancakes (she’s got the pancake down to an art form). My batch included:

  • 1/4 cup almond flour
  • 1/8 cup almond milk
  • 1 egg white
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • stevia
  • cinnamon
  • vanilla extract

I loveloveLOVE almond flour pancakes! They’re super fluffy and flavorful. I’ll definitely be making these babies again in the near future.

Now I’m off to watch the Grammy’s (red carpet, of course) and then Desperate Housewives. What a wonderful way to start the week :) Have a great night, and make sure to check out this morning’s post - I’ve gotten some interesting feedback, and I’d love some more!
