Okay wait a second. Where did this week go?! I can’t believe it’s already Friday. I’m certainly not complaining. I’ve got a pretty laid back weekend planned, which I’m really looking forward to.
So far today has pretty much been a repeat of yesterday. Although I do love working from home, it’s a little bit more difficult on Fridays because it puts me even more into “weekend-mode.” But that’s okay because I’ll be done in a few hours anyway =)
I started the day with a mug of coffee, which I apparently downed half of before snapping a photo :/

I wasn’t incredibly hungry for breakfast, so I made a small egg white scramble with mushrooms, pesto, and Laughing Cow cheese:
A few hours later I started thinking about lunch, and I decided to make what I was planning on making for dinner: spaghetti and meatballs! Well, uh, spaghetti squash and turkey meatballs. Even better, right?
I started by stabbing the squash about 10 times to make sure it didn’t explode in the oven, and then roasted it at 375 for an hour. I’ll be honest, I felt a little violent attacking the squash with a butcher knife….
When it was done I cut the squash in half, scooped out the seeds, and began scraping the “spaghetti.”
The rest was easy: top with a few Jennie-O turkey meatballs and Capa di Roma organic tomato sauce.

Less = more. This sauce was seriously bomb…and that’s coming from someone who definitely isn’t a fan of jarred sauces. It completed the perfect meal:
Confession: this is my first time trying spaghetti squash! I always thought people were kind of dumb for actually thinking that squash could replace the delicious, carby goodness of real pasta. But I’ve got to say, this was FABOOSH! Soooo so good! Obviously I could tell that it wasn’t *real* pasta, but it definitely was a decent replacement.
Plans for the rest of the day: finish up work, errands with mommy, etc. Ta-ta darlings!! xoxo G

Yum! I love spaghetti squash and those meatballs look fabulous!! I would love a bowl of that right now!! And I agree with you on the sauce too, less is more!
Another good replacement for pasta is zucchini ribbons…im pretty sure you just sautee them in olive oil in a fry pan with some salt and pepper after you peel them into ribbons…its seriously soooo good =)

If i’m craving fries, i’ll make some baked fries or even better.. sweet potato fries with agave nectar, salt, and cinnamon. Oh yum.

I’ve been so dying to try spaghetti squash. I can never seem to find it, though - and admit I am a little scared because I’m not a huge squash fan, other than pumpkin! I’ll eat just about any veggie though, so I don’t see how it can be so wrong if I dress it up like real spaghetti, right?!
