A little while back I asked what new varieties of Cake Batter Blondies you’d like to see most, and one of the top responses was a Red Velvet version.
Your wish is my command.
ingredients:
- 1 box red velvet cake mix
- 1/4 cup canola oil
- 1 egg, beaten
- 1/4 cup milk
- 1 batch of cream cheese frosting (optional)
- sprinkles for topping (optional)

directions: Preheat oven to 350 degrees. Put cake mix in a large bowl and mix in the oil and egg. Then add the milk slowly just until the batter is combined – you want it to remain as dense as possible. Place batter in a greased 8×8 pan or 8-inch cake pan and bake for 24-26 minutes. Let cool for at least 60 minutes before cutting/frosting because the gooey center needs to set. The result will be a decadent, brownie-batter texture.

These are the perfect combination of the richness of Red Velvet Cake and the ooey-gooeyness of a fudgy brownie. The addition of cream cheese frosting is almost too much to handle.

Yup – both! That’s pretty much what all of my Cake Batter Blondie/Brownie “recipes” are – a different ratio of oil/eggs than what makes regular cake. That’s why I even have trouble calling them recipes!
Oh my gosh, my mouth is watering!!! These sound incredible. I’ve been trying to decide what to make my boyfriend for his birthday, because he DOESN’T like peanut butter or chocolate (which is kind of insane) so red velvet might be the way to go!

YES!! I’ve already done a couple of versions of pumpkin cake batter cupcakes but we all know a blondie version is very much necessary

Well, Red Velvet Cake is actually chocolate, so these essentially are brownies! (whereas yellow/vanilla cake mix yields my cake batter *blondies*)

Sooo…. I made the recipe and they taste amazing, but how do you get the top to be flakey and flat like a normal wet brownie? Is it a little more milk?
Hi Julie! Mine turned out that way based on the recipe/ingredients above…maybe it depends on the brand of cake mix?? Or more milk might do the trick! Let me know if you give it a try!

Ok I’m baking these as we speak but I’m afraid my batter was too dense. I even added a little milk. It was kinda hard to stir. Is this how it’s supposed to be?
yes! that’s how it ends up staying really ooey gooey as opposed to cake-like

I just attempted these brownies. Same brand of cake mix as well. Mine didn’t come out quite gooey but rather dry and crumbly. I don’t know what happened I’m pretty bummed but it still tastes good.

I let them bake for 25min. I also did the Nutella ones right after and they came out perfectly fine.
Mine were a disappointment. I don’t pride myself on being a good baker- i am unsuccessful at these sorts of efforts quite often. But they don’t taste like brownies, they are crumbly and really dense. The icing is the only good part. Bummer. They looked so good.

What away to end Sunday diner!!! I did add a splash more milk to achieve that flakey top. Iced with Cool Whip Cream Cheese icing and a little red sprinkles ( my 5yr old called it Fairy Brownie Dust). Thanks for the easy recipe!!!

Made this Sunday and I made a double batch for my sons’ football banquet and a single batch for them and my husband. I used the new cool whip cream cheese frosting. They were fabulous and they absolutely loved them, wouldn’t even let me take the other batch to the banquet had to make cookies

Can you use heavy cream instead of the milk or is that a no no?
I’ve never tried using heavy cream, but if I had to guess I’d assume it would work just fine! let me know if you try it and how it turns out

I just made these and it was such an ordeal. I don’t know what happened but my batter was almost too thick to work with. I had to add milk to it and it was still really thick. They’re in the oven now. I hope they turn out okay…

Why does your recipe call for baking these cake mix brownies in only an 8×8 size pan? When one males a cake from a mix, a 9×13 pan can be used. Is it because the batter is less since it is so thick?
yes – because the batter is thicker = less. the smaller pan also lends to a more dense, brownie-like texture

I would do it in an 8×8 brownie pan or 9-inch round cake pan. Because the batter is so thick, it may not cover the whole 9×13 pan, and if it does than the brownies may come out dry/crunchier as opposed to dense and chewy.

Made these using extra light tasting olive oil and almond milk along with the egg and they were fantastic.
