Around the first of every month, Jessi and I sit over a good meal and take part in one of our favorite activities – verbally processing. Yeah, we’re really that cool.

We recap the past 30 days – what we loved about it, what we didn’t love, what we learned, etc. Then we decide what we want the next month to look like and ask God for those things.

On Saturday this little tradition took place at one of our favorite brunch spots, Penelope. Penelope is a cozy restaurant in Murray Hill that looks and feels more like you’re in the Hamptons than in Midtown NYC.

According to Jessi, their best dish is the chicken meatballs, but that wasn’t on their brunch menu. I ended up ordering an omelette filled with ham, spinach, and feta cheese, served with a huge side of hash browns. Jessi got the BLT with avocado, which was taken up a notch with the addition of a balsamic mayonnaise.

The $14.50 prix-fixe brunch menu also includes a cocktail or coffee/tea and juice. Everything was delicious – the perfect comfort food for a rainy day, and an even better way to kick off the month of April.
