post-fiesta feast.

My Cinco De Mayo included many of the necessary components: a Mexican-themed outfit, partying it up with friends, and a 4am bed time.

What it didn’t include, though, was ample amounts of Mexican food. And, considering Mexican is probably my favorite cuisine, this had to be made up for.

So yesterday after work, I met up with four of my favorite girl friends at Baby Bo’s Cantina in New York’s Murray Hill district.

It was a smaller place with a cozy, authentic Mexican feel. We all liked the crosses on the wall and snapped photos of them, typically :)

Jessi suggested we start the meal by ordering a number of the different dipping sauces they offer. It was a good call.

I can’t remember what all of the sauces were, but there was a chipotle one, homemade salsa, guacamole, sour cream, and a sweet (chile?) sauce. They were all delicious, and the chips were pretty much never-ending.

I couldn’t decide what to order for my meal, so I ended up making my own dish. I ordered a side of brown rice, a serving of their pulled chicken, and guacamole.

…and proceeded to make a giant mish-mosh of the three. It was heavenly.

I’m pretty picky when it comes to good authentic Mexican food, and Baby Bo’s didn’t disappoint. Definitely one to consider if you’re in the Murray Hill/Midtown East area.
